Title: TOG Brewday - 11th August

Venue: Tog, Chancery Lane, Dublin 8 (www.tog.ie (http://www.tog.ie))
Cost: Free (Donations will be accepted, by tog or the capital brewers)

Format:
Brewing -  All Grain, possibly Extract.
Beers - I'll hopefully have some of the beer from the last brewday.
Talks - Has anyone got a talk/workshop ready to go for the event?

Kick off as always at 10:00, see some of you there!

I have the bones of a talk ready. It's a practical guide to water treatment. I'll print up some handouts beforehand to make things easier. I might also bring my laptop to demonstrate how to use a water treatment calculator.

TOG have a fairly massive projector in their main room so i'm fairly sure you could hook up to that.

Yea, we can use the projector and it should be easy enough to set up. Should we bring a few samples of tap water to have a few different ones, a nice practical workshop on testing water?

I could buy the test kits if someone told me what to get! I need to get some test kits anyway!

Yeah I think it would be worth doing that. for example Tube's water vs TOG's water. And maybe a sample before and after boiling?

I think Will_D has a few different types of kits.

I can bring a bunch of stuff:

- calcium test kit
- alkalinity test kit
- pH meter
- calcium sulphate (i.e. gypsum)
- calcium chloride
- magnesium (i.e. epsom salts)
- lactic acid
- campden tablets

I also have a copy of a recent water report that I'll be able to go through.

I don't think it's practical to demonstrate everything on the list above but I can probably do one of the water test kits and maybe show how lactic acid can be used to alter pH.

What I'd really like to do though is take people through a typical brew day and show all the steps that go into treating water, especially during the mash. It might be good to compare how you would go about treating soft water versus hard water too.

Edit: one idea would be to give a short talk and then demonstrate some of the theory during the brew itself (if the brewer doesn't mind having their water messed with [in a good way!])

The TOG water is very soft and probably very similar to yours so you could probably, for the sake of simplicity, assume it is the same for a water treatment example.

Cool. Maybe a quick side by side alkalinity test of the TOG water versus Leixlip water. People would also bring along there own water to test it themselves using the kits. They're very easy to work with.

Yea, I think repeating the test would be useful, even if it's just to show people how to do it. If I can get a sample of your Leixlip water closer to the event I could even boil it after testing it to see how much precipitates out of solution.

I might be a bit cheeky in asking this, not knowing what exactly is involved in water analysis, but would it be possible for people to bring in samples of their own water for testing? Or is there too much effort/expense involved?

(may need an oul bit of hops (BramlingX) n some yeast (the bit that still bewilders and bemuses me with regard to brewing, actually no the whole thing is a mystery but sure, the beer tastes great after so can't complain about all the confusion!!!)
am willing to throw u few squids for any of these such donations and anyone any idea of a nice wheat beer kit to modify for a non-toxic version of BLu Moon would be awesome....  :D)

I have lots of Citra, Centennial, Sorachi Ace, Amarillo, Columbus and Chinook. I also have lots of Saaz. All are 2012 harvest, vac packed and frozen.

To be honest, I have so much in total that I'd be willing to sell some on. My freezer is packed! If anyone wants any of the above PM me and I'll give you a price run down

Hi lads

Looking forward to next brew day on 11th Aug...

Any one have some equipment HLT Mash tun cooler and so on ya wouldn't mind bringing along...? Please  ;D

I have a "beer/cider starter  kit" which includes 2 fermenting buckets, hydrometer thermometer syphon bottling wand, and so on but if anyone could bring along the gear for Mash and boiling for the day... I'd really appreciate that.

I know Padraic may have his own stuff n tow but I think it might be being used so if someone else (who's not gonna be brewing at TOG on 11/08) were willing to let me use it for the day that'd be ace, and I promise to return it squeaky clean  ;D

Let us know anyway. Tasted a lovely beer this avo in Dakota a Weissbeer on tap that I'd hope to clone All Grain, waiting to get the name of it off of my friend and hopefully it wouldn't be too difficult to reproduce!!! that or something similar at least...

Beer tasted on the day
am told is called "Fransis Kanner" and was pleasant.  But any half decent and simple enough recipe for a light wheat beer I think would do the trick. Anyone have any ideas for my first all grain brew of that variety and I'll get some gear to b ready for next Sun....


Is that Brew day still going ahead??

I'll probably look at two or three different ones. Maybe Brau Kaisers', the EZ Water Treatment calculator and Graham Wheeler's more complicated one.

Guys -

I was going to do a braumeister brew of a Hefe Weizen - Probably be closer to 10:30 when I'm there - but I'll do my best.
I believe I have a few bottles of a batch we previously made - so I'll bring them too.

Just a reminder that I'll have some water test kits with me if anyone wants their water tested. Just bring along a small bottle containing a fresh sample. I'm happy to let people do the tests themselves. It's the best way to learn how to do it  :)

Does anyone need hops? I have plenty for sale or for swaps (I'd like to get some Bramling X and some Styrian Goldings if possible). PM me for more info.

This (http://www.tog.ie/location/) is the location. I'm aiming to be there for 10, brewing (or at least heating the water) usually takes place around 10.30.

Any talks,tasting are usually done during 'quiet' periods of brewing such as mashing, after 1st hop addtion, cooling etc... Usually everything is over by around 4.30.

Looking fwd to this one. am sorry now not to be brewing tomorrow but deffo next time I hope!!
Moving house next week so it just wouldn't be convenient to be transporting the buckets as well as everything else... would it also upset the fermentation process???

Peter, would be v interested to buy some Bramling X off you for my next brew. i've 5kg Marris Otter pale Malt and some dark crystal malt so all I'd need then I think is to get some yeast and that would hopefully be the next All Grain Ale to do in September...
Do the hops need to b kept refrigerated/ in the ice-box?

I won't be making it in until late in the day if at all... Shane McD and shiny will be in around 10 with jules, I think kickoff should be at around 10:30 for the first of two brews!

I think the idea was to chat about water chemistry at various points throughout the day. But I'll probably wait for the mash or the boil for the main part. If you miss anything we can have a chat ourselves about everything. I'll have my laptop with me so we can go through whatever you like.

100g of saaz and sorachi ace is no problem. I have them set aside for you. Cheers

For those who couldn't make it to TOG yesterday, here's a pic of the info we put up on the blackboard. The column on the right includes recommended ranges for mineral levels in beer. The middle column is a typical profile for the Ballymore Eustace water supply. The boxes on the left are the readings we took on the day for Oranmore in Galway, Rathfarnham (which looks like it is on the same Ballymore Eustace supply), Malahide and Bray (which has the softest water I've seen in Ireland so far). Hopefully it'll be of use to some of you.

So what about getting the minerals to the optimum levels? Would you recommend adding minerals to increase concentration?

I'll post the recipes that we brewed in a separate thread. Both are bubbling nicely.
