Notes: This is a Witbier - a little like Blue moon
Mash for 60 mins at 66°C, then sparge at 76°C. Be careful on the mash, make sure your run off is very slow when you sparge due to the 50% wheat its easy to get a stuck sparge.
The sugar is added at the boil with 5 mins remaining. This really should be dextrose ("brewing sugar") but table sugar will suffice if you don't have dextrose.
WLP400 yeast ferments fast. After 4 days take a reading, try not to let it go below 1.009. Bottle or keg at 1.010 if possible.
For carbonation, add 135g of dextrose or table sugar to your bottling bucket (2.5 Volumes)

[size=10]20 g Saaz (3.5%) - added during boil, boiled 60 min[/size]
[size=10]20 g Saaz (3.5%) - added during boil, boiled 15 min[/size]
[size=10]1 tsp Whirlfloc Tablets or Irish moss - added during boil, boiled 15 min[/size]
[size=10]15 g Saaz (3.5%) - added during boil, boiled 5 min[/size]
[size=10]25 g Corriander seeds - added during boil, boiled 5 min. You can get these in Asian food shops or from some home brew suppliers.[/size]
[size=10]25 g Orange zest - added during boil, boiled 5 min. This is the zest of 3-4 oranges.[/size]
[size=10]1 ea White Labs WLP400 Belgian Wit Ale (or Fermentis S-04 or T-58 but read up on these first to know what to expect).[/size]

Your edits are spot on - no problems there.

1. Have you ever had a stuck mash with wheat? I've only ever had it with oats. I didn't think it was a problem with wheat.

I have had it with wheat - but your right that oats compounds the problem

2. Coriander seeds should be crushed, no?

Yes- coriander should be crushed to dust

3. Orange zest should be bitter oranges, like Seville?

I prefer to use nice big sweet oranges from the asian market in town - great results from using those - I dont bother with bitter peel.

4. Bottling or kegging at 1.010... will fermentation not just continue in the bottle

If flocks out pretty well and once its off the yeast it calms down a bit - I generally keg this but I have bottled it and have never noticed over carbonated bottles.

I will try to improve the format a litte more - so it reads like an article.

Can I make a suggestion -

If people send me the reciepe I can put into into beer tools and alter the format - so all reciepes appear in similar format.

Yeap - I have actually brewed this many times - always tweaking things -

This had way too much orange zest -

Change to

15 g Orange Zest
25 g Corriander Seed

Strangely I didn't get any coriander off this -
but I take the point -
15g of each is probably a safe way to go.

FYI - your abbeyliex beer didn't have too much coriander - it was very well balanced - that's why I scored it so highly !  ;)
