Christmas Milk Stout

I went that this yesterday - its an american recipe I got on beertools.com and added Munich as I had a bit knocking around. Boy did I trash the kitchen with this one I tell ya - It was a complete bomb zone - started at 2pm (with an almightly hangover) and finished cleaning at 1am

But hit my numbers and its bubbling away nicely.

For some reason beertools get very con-fusted with Lactose - so the beertools says 1.057 to 1.017 but you will actually get 1.068 - 1.028

[size=10]Mash in at 120F for 30 mins. Ramp slowly to 160F and rest for 30mins. Boil for 90 mins, adding Centennial hops at the beginning of the boil and the lactose during the last 15 min of boil. Add Willamette hops at the end of boil. Ferment at 68F.

OG = 1.068 FG 1.028 (Higher than the predicted because of the Lactose)
IBU=27 SRM=62 ABV 5.2%

I actually went for a slightly different mashing schedule -
1: 62 - 30mins
2: 71 - 30mins
3: 76 - 05mins

Now that would be commercially sensitive information !!  ;D

Its a pretty standard German Mash schedule (minus the protein rest) - you go for the middle of the beta and middle of the alpha and then a mash out -

Not bothering with the protein rests any more as most believe the malts are so well modified these days that protein rests actually do more harm than good (remove body).

Actually I normally do a single infusion mash - its just that it was stepped in the original recipe.

Glad to hear of anyone elses opinion on mashing -its strangely quiet on the web for mash schedules and brewers experience - other than the standard science blurb.

It's going to be really sweet... With my last milk stout I've used 300g with 40l batch and was sweet enough.

Had a chat with a German brewer a while back, he brings all his malts in from Weyermanns, he wouldnt use over modified Irish of UK malts :o What you're used to I guess

I used 500g in my last milk stout (for 20l batch) and it didn't seem like too much. I think I put some in my latest coconut porter as well but I have to check my notes (I always think I'll throw everything in and then talk myself out of putting too much in at once and then forget what actually made it into the batch (there may not have been any coconut in my coconut porter :)))

I think the original recipe had 454g (1 pound) - to be honest its my first time using lactose.
