Commercial hop availability?

Where do commercial breweries in Ireland get their hops? And are they limited to the same hops we see available to us in homebrew stores? For instance, say a brewery started a couple of years back and used Nelson Sauvin in their IPA do they just change up their recipe if the hop is not available in Ireland or just source it elsewhere for more money?

Some buy directly from suppliers such as Yakima Hops, Charles Faram etc. Others will buy them from the homebrew shops just the same as we do and yes, get the same varieties as we do. They can sign hop contracts for a certain amount of a particular hop each year but these are apparently not always worth the paper they're written on. 

Your 3rd question is really a matter for each business but I know Metalman had originally planned to use Amarillo but changed their recipe when the demand/price went up.
