Get your hands in some out of date or nearly out of date cream in your food processor & mix till you get butter. It's fool proof really.

Ive been using a poolish starter and am getting good results. Also once your full amount of flour and liquids are mixed i leave in bowl  for 10 mins before first knead, then 10 more mins rest knead again,dough gets nice and stretchy very easily.
Wife says to me one day... "so do you love beer more than me?....
Naturally, I replied,...... making it or drinking it??😱😱
