So doing a bit of rounding:

Style: Belgian Dark Strong Ale

Should finish around 9% so I'd be happy enough with that.

Methinks I have too much water (5 real gallons as opposed to 5 gallons US!)

Just need to re-tweek the water or up the malts by a couple of percent.

I will wait for "Nigel the Recipe" to upgrade it!!

As a side note - shouldn't pilsner malt be boiled for 90 minutes?
