National Homebrew Club Ireland

Ok folks to get juice that has won the last 3 Nationals and or placed second or third or both for the last three comps this is where you convert your interest into a commitment.

Remember we are working to an interested parties list first, if you are are member and want to participate please put your name down on the reserve list below as all that registered their interest may not wish to follow through.
I will order from this list around the 25th so you have just under 3 weeks to convert from interested party to name below.

What do I get?
The juice will be pressed the afternoon before and chilled in a coldroom, then delivered to your door within 12 hours in a 25L plastic drum, which is critical with fresh juice, last years had loads of natural yeast on skins and as with the warmer weather last year some of them started to ferment just as they were delivered. You can ferment in this drum by drilling a hole in it and inserting a bubbler and bung all sanitised, not good for long term storage however!

Payment:
I looked at the costs and can't have another year where the club only made a quid on €1,800 but we have economies of scale this year help so am gonna keep the cost the same as last year :)
Payment is now due, this is to be paid to the NHC Paypal Account REMEMBER TO PAY THE FEES, or Bank Account, the amount per drum is €31.00 plus €0.01 per order for identification, i.e. €31.01 for one drum, €62.01 for two,  €93.01 for three drums etc the cent is the marker so Dempsey can track it through the account.

Transparency:
The club gets €1.01 so should get over a hundred this year, the drums cost €25 and the rest is 2 days LWB van hire insurance diesel tolls etc, if there is a surplus it will go to the club as I am transparent with Mr Demsey on costs. This year this fee will be applicable to all drums even if you want to collect it the reason being is we want to keep the costs down for everybody, I know that might sound unfair but I prefer to deliver!

I really hope all on the interested parties list follow through as this will keep the costs down for everyone and the buy will cover all costs.

Quick QC recon this ave, harvest quality is good in spite of average weather and we are definitely on for end of the month, they will press in an afternoon the 3mt and so plan is to do a run with the first 1500l and return for the same again 8 am the following morning, probably cork limerick Galway Dundalk NCB  with the first lot but that will be confirmed nearer the time thanks to those that have volunteered to act as drop points.

Ok Gents away this week but reconciliation confirms at this stage we have 2425L.

I have pm'd the outstanding folks on the interested parties list and given them until close of play tomorrow as we still have a little bit of head room.

I am going to close this Thursday at midnight. I will then place the order and after Mr Dempsey has made the transfer aim to collect if its ready within the next two weeks

Please order your campden tablets/yeast and any other ingredients at this stage rather than scrabbling round for them in 2 weeks!

Confirmed now Juice will be delivered over two days on the Monday the 16th and Tuesday 17th.

Juice will be pressed on morning of the 16th, important that you show up to your collection point that evening, there are 11 throughout the country.

The majority will be done on the 16th.
GCB LB and NCB will all be done on the 17th.

I will also collect Belfast Entries on those drops.

Using my cheap pH meter (read ballpark figure) and hydrometer I'm getting:

@8C - pH3.9 - SG 1.044

Thinking 15 campden tablets per drum required based on Cider 101.

Not sure if that reading is correct, pH seems a bit too high. I'd add about half that at the moment. Can always add more. Just updated 101 with a note about using malic acid if its that sweet!

After a question from Delzep on 101:

"Would leaving the juice in a fridge at low temps after adding campden tabs give a day or twos grace before adding yeast?"

I replied:

Yes. The Campdens are added to set the pH of the juice such that the wild yeasts and particularly bacteria are suppressed. The comercial strains of beers/wine/cider yeast will work at these pH levels.

Low temperatures also affect the above micro organisms so its a double bonus if you fridge as well.

Looks like the outside weather is going to help as well

Recomendations are:

Below pH 3.0 - no need juice is acid enough
3.1 - 3.3  1 tab per gallon
3.4 - 3.6  2 tabs per gallon
3.7 - 3.8  3 tabs per gallon
Over 3.8   Need to add Mallic acid - Higly unlikey in a commercial cider juice blend like we have!

And don't worry the SO2 won't be in the finished cider as it gets bound onto other things.

One other note for people in small houses with sensitive noses: Your partner will often detect Hydrogen Sulphide aromas from the fermenting juices and be not impressed.
Most of us find that adding wine yeast nutrients will help to reduce the smells.

However Cider is best fermented cool ( low and slow ) so once you get the initial fermentation, outside is the best place - either in a shed or just outside in the shade, with the airlocks covered.

Juice smells superb  :)

I got 2 lots. One was dosed with cam tablets last night and one left to do its thing naturally. Both kids were cracked before going to bed last night. Natural one was like a rugby ball this morning. It's a lovely one already.

Tasting it I definitely get the the sweetness and a kick in the background from the Dabinette.

Mine are transferred into ferments,  aerated, and I pitched camden tabs and  US05 on one.
Not sure about US05, but sure we see what happens.

Campden tabs are an inorganic chemical and have an infinite shelf life as long as they are not damp/wet!

This doesn't happen single handedly and it was only possible with the support of the rep drop points, even those who weren't participating in the buy are worth their weight in gold, so next time you are out with them buy them a pint.
