Curious to see what my fellow smokers are getting at their butcher. I find brisket is hit & miss at best of times & its heartbreaking as its pricey. Im really happy with the sausage & pork shoulders I get. No complaints there. Post pics. Before & after would be great too if ye have em.

These were loin ribs. Think I could have given them another hour or so, they weren't quite soft enough. Think I just tried to cram too many on this time. I'm gonna try some beef short rib from them too.

That spatchcock looks amazing.
Spatchcocking is easy enough to do, next time I do one I'll post up instructions, all you need really is a good kitchen scissors.

Did some beef short ribs a week ago, smoked with cherry. Turned out well, but pork ribs are still my personal preference

My favourite cut of meat is flanken short ribs for Kalbi but i've not found a decent source in Ireland...
I got them from Mcloughlin buchers in ballyfermot. Price was very good and the meat quality was fantastic.
The drippings from these ribs was the most intensely beefy thing I have ever tasted!
It's getting back to decent weather so time to bump this.
Where are people getting the wood from? I've used hickory and beech wood chips from woodies but looking for a good source for hardwood chunks.
I've got some NamChar 5kg Namiban Hardwood charcoal from these guys Woodfuel.ie (https://woodfuel.ie/product-category/charcoal-shop/)
I'd go for their catering size next time, bigger lumps (had to put a finer mesh on rack to prevent them falling through a Weber) - good price & heat/burn though.
He delivers into city centre (Dublin ) often enough so you can meet him when he's about.
Looks like the also do smoking chips (https://woodfuel.ie/product-category/smoking-wood-chip/) as well.
Weber have their own range of wood chucksive used them, and they worked beautifully. There's a few places on adverts for chips but i find they burn up too easily
The Orchard in celbridge have a large range of wood chunks..not cheap but extensive
