Hop Bomb

Curious to see what my fellow smokers are getting at their butcher. I find brisket is hit & miss at best of times & its heartbreaking as its pricey. Im really happy with the sausage & pork shoulders I get. No complaints there. Post pics. Before & after would be great too if ye have em.

On tap: Flanders, Gose,
Fermenting: Oatmeal Brown, 200ish Fathoms,
Ageing: bretted 1890 export stout.
To brew:  2015 RIS, Kellerbier, Altbier.

Quick blast after a brush with BBQ sauce



These were loin ribs. Think I could have given them another hour or so, they weren't quite soft enough. Think I just tried to cram too many on this time. I'm gonna try some beef short rib from them too.

Nice thread. Here are a few of my cooks from this summer.
Jerk Chicken Thighs. In lieu of pimento wood I used apple wood.  :D

Spatchcocking is easy enough to do, next time I do one I'll post up instructions, all you need really is a good kitchen scissors.

I'll try to get some photos from the Liffey comp the last week, I didn't take many myself but there are others who did.
