brewing a 100% rauchbier as i write. wondering which and how much hops i should use. i tempted to use a crap load of them but i wonder if thats wise. i have ekg, hersbrucker, centennial, simcoe, wakatu, perle and apollo. any thoughts?

Not sure if you'd really want much hop character in a rauchbier so I'd just go with a good clean bittering hop. The germans would probably use the herbrucker or perle. I'd definitely not waste any of the good Simcoe or other new world hops you have there.

Cheers, you think its possible it could be good to do with a lot of aroma hops? Might try it next time

Don't think it would work well. But if you were to give it a go I'd go for earthy/herbal/spicey/woody/resinous hops rather than fruity/citrus. Maybe try dry hopping a small portion with some ekg

Woops you posted while I was typing, Perle should work with the smoke
