Also pick a date for emptying the new old ale and lambic barrels!

As for the ris, let's see how it tastes and weather there's any bugs in there
Fermenting: IPA, Lambic, Mead
Conditioning: Lambic, Cider, RIS, Ole Ale, Saison
On Tap: IPA, Helles, Best Bitter

If it has bugs in it I vote for a Flanders red.
