The South Dublin brewers home brew group will be meet in Three Tun Tavern in Blackrock village.

The next meet is on Thursday  31st of May @20:00.

This years cider, personally, was a level above previous years when transferring to secondary, but it was also the first year using cider yeast, so can't say if it was process or raw materials.

What I can say is after the 2 year mark, the all start taking on a life of their own and getting really good.

I found that the cider developed further and really came in to its own after about 18 months. Storage is important though as keeping small quantities in bottles good for prolonged periods is tough. I found that the seals on crown caps won't keep that long and swing tops can also be problematic. Storage temperature and humidity will adversely affect smaller volumes more. In the 2016 I stored most of my juice in kegs and in the next few months will start to tuck in to especially if the summer is as warm as it has been over the last 5-6 weeks.
