Extract brewers?

Do we have many extract brewers on board?
I haven't brewed an extract beer in a while, but have been considering doing one due to not having the time to get an AG brew done.

I've been extract brewing for a few months and here are my two favourite recipies so far:


Title: Brewdog 5am clone.

Brew Method: Extract
Style Name: American Amber Ale
Boil Time: 60 min
Batch Size: 26 liters (fermentor volume)
Boil Size: 11 liters

STATS:
Original Gravity: 1.048
Final Gravity: 1.011
ABV (standard): 4.85%
IBU (tinseth): 33.8
SRM (morey): 11.7

FERMENTABLES:
1 kg - Dry Malt Extract - Light (25%)
2 kg - Dry Malt Extract - Light - (late addition)  (50%)

STEEPING GRAINS:
0.25 kg - Extra Dark Crystal 120L (6.3%)
0.25 kg - Caramel Pils (6.3%)
0.25 kg - Munich - 60L (6.3%)
0.25 kg - Crystal 15L (6.3%)

HOPS:
25 g - Nelson Sauvin (AA 12.5), Type: Leaf/Whole, Use: First Wort
10 g - Cascade (AA 7) for 40 min, Type: Leaf/Whole, Use: Boil
10 g - Nelson Sauvin (AA 12.5) for 10 min, Type: Leaf/Whole, Use: Boil
10 g - Cascade (AA 7) for 5 min, Type: Leaf/Whole, Use: Boil
10 g - Centennial (AA 10) for 5 min, Type: Leaf/Whole, Use: Boil

And my first really successful extract beer, from The BeerNut (i used Amarillo and columbus hops)

3 kg Dry Light Malt Extract
785 g Light Crystal
246 g Dark Crystal

20 g Summit (17.6%) boiled 60 mins
10 g Citra (13.8%) boiled 50 mins
10 g Summit (17.6%) boiled 40 mins
10 g Citra (13.8%) boiled 30 mins
10 g Summit (17.6%) boiled 20 mins
10 g Citra (13.8%) boiled 10 mins
0.5 Whirlfloc Tablets boiled 10 mins
20 g Summit (17.6%) boiled 0 mins
30 g Citra (13.8%) added dry to primary fermenter
US-05
20 g Citra (13.8%) added dry to secondary fermenter

20L
OG: 1.057
FG: 1.014
5.7% ABV

Carbonation: 104g of dextrose, for 2.3 volumes of CO2.

Do you know, it's not far off. It could do with being a little more hoppy, the Centennial hops were from my garden and not fully dried and I think that made a difference. But I really like it.

I notice you add 30% of the DME late ? Any reason ?

I'm exclusively an extract brewer too, my favourite so far is BeerNut's recipe for the Summit and Citra ale shown above. My latest stout has turned out alright, I'll post the recipe later on.

James, the late addition of DME is for partial boils, it aids hop utilisation as the gravity would be too high during the boil which effects bitterness, it is also useful when brewing lighter beers as the 1hour boil can darken the DME.

It's a tip I got from the BBR podcast, I assume NewBier does it for the same reasons.

Kinda surprised that they're not using American hops, but I might try it out at some stage.
If it's good enough for the White House, it's good enough for My House.

The instructions are nice and clear. Even an American could follow them... :-X
Although, somehow they 'distill' the beer by transfering it to a second 'fermentator', and I don't think I could do that :(
