I want to have an attempt at a Patersbier. All the recipes I've seen use liquid yeast (Wyeast 3787 or White labs WLP 530). I'm putting in an order for delivery this week but it could be a month or six weeks before I brew, so I'm thinking a dry yeast may be better. Maybe Safbrew S-33? Anyone any other suggestions or indeed a tried and trusted recipe?

S-33 doesn't have much Belgian character at all. It's more a neutral European ale yeast than anything. If you want to use a dry yeast T-58 has a peppery Belgian character that would probably work well in a low ABV blond beer.

Yeah, looks like others have had good results using T-58. Sounds like it might do the job. Thanks for the suggestion.
