So next brew am looking at doing is a single-hopped with Willamette rye beer and have cobbled together this brew, never used Willamette so trying to get the most out of it.

3kg Amber DME
500g Dark Rye malt... this stuff to be precise www.thehomebrewcompany.ie/dark-rye-malt-500g-crushed-1520-ebc-weyermanns-p-2300.html

25g of hops @ 40, 30, 20 and 10 minutes. Could change these times around and do 25g dry-hop, what do people think?

Yeast S-04

Cheers!

Definitely keep dome for dryhop. This is a great aroma hop.
I'd probably substitute the 40minute with magnum/summit or some other high AA hop for the bittering, and have more Willamette for the rest.

Thanks I like the sound of Magnum, a neutral clean bitterness which doesn't take away from the other things going on.

Just found 2oz of Bramling Cross (2008 harvest?!) hops in the freezer, I would have bought these back early 2012... I was thinking would there be any harm in throwing them in as a dry hop?

Cheers!
