Since it's the season of receiving beer from the inlaws, now seems like a good time to bring up culturing yeast from bottle conditioned beers. I won't go into detail because it's all in the WIKI (probably), and plenty of information abounds online. But I'd like to share with you that Fuller's Bengal Lancer (also known by a number, IIRC) cultures up wonderfully. Didn't attenuate very low for me, but the beer tasted delicious, and the ferment was a delight to behold. I've a bottle of Proper Job here that apparently uses the primary strain to condition. Might give that a go.
So, any more out there that you've tried and tested? Any interesting Irish ones?
Proper Job & lancer are well known in culturing circles, but I would struggle to think of a single Irish brewery who is using a strain unique enough to bother with.
