orange hefeweizen Very fast carbing

Hi Guys,
Put this on three weeks ago.
Bottled during the week fg 1.006.
Put into a temp controlled box @ 23 degrees Celsius , a mix of glass and coopers oxy bottles.

But it seems to have carbed up within three days!

Here's the question... continue carbing or start conditioning, I'd love it to be drinkable for crimbo😉

How much priming sugar did you use? and how did you prime?

7g per litre batch primed.

Show I open one to have a look see?

Should I be worried lol.

it doesn't sound like there's anything to be worried about.
It'll be pretty fizzy, but that's intended.
Sure stick one in the fridge and try it out   :)

Stuck one in the fridge this morning, opened tonight, good hiss, reasonable head, good carbing, Swmbo thought it was lovely , and for once she's correct!

Between the two of us, gone in ten minutes flat .

Not too gassy, maddest carbing I've ever seen.

Lovely taste.

Next question .....

Optimum conditioning temp, to make it mind blowing 😄

Lovely, it sounds just right so.
Just keep it at room temperature for a couple of weeks for the yeast to finish any remaining sugar and clean up a bit.
It's great from them til about 2-3 months, then the freshness (which is its main strength) starts to fade and it becomes a bit more neutral. Although I drank a few of these after a year and it was still quite nice.
