Chipotle Mayo

Heres the recipe for the Chipotle Mayo served alongside the Smoked Chipotle Porter at Brewcon.
Its very simple and straight forward, just leave it in the fridge for a minimum of 3 days to let the flavours blend.  It wont taste 100% at first, it really does need a few days to let the flavour develop.

Using a standard 500g jar of Mayonnaise these are my ingredients:

500G Mayonnaise
2 Tsp Chipotle Flakes
1 Tsp Garlic Powder
1/2 Tsp Smoked Paprika
1/2 Tsp Black Pepper
1/2 Tsp Smoked Salt
Juice of 1/2 Lime

You could get away with normal sea salt but you really need to get as much smoke into the mayo as possible so try get your hands on smoked salt.
Mortar and pestle the chipotle, salt and pepper first then just stir it all into the mayo.
I seperate it into 4/5 small kilner jars and keep in the fridge.
