Salsa/Nachos

A regular in our house

5 medium tomatoes, remove stem, finely chopped.*
1/2 medium red onion, finely chopped.
Handful of coriander (cilantro, Leaf not Seed!) finely chopped.
Juice from 1/2 lime.

To taste, all optional...
Pinch or 2 of Sugar (Makes Tomatoes more tomatoey)
Fresh ground black pepper.
Frank's or Tabasco.
Chillis, finely chopped, Fresh or dried, seeds or not.
Garlic clove, finely chopped.

Stir well.
Make in advance to let flavours infuse.
Serve with plain salted tortilla chips.

Nachos...
Layer of tortilla chips.
Roughly a teaspoon of salsa per chip.
Grate with cheddar or favorite cheese.
Fresh ground pepper to taste, Jalapenos, etc.
Microwave for 2m30

*My trick to dry out the salsa is to chop the tomatoes first.
Put the tomatoes in a bowl.
Place your chopping board on top of bowl.
Invert over your sink to let tomato juice out.
Reinvert and continue with recipe.

No chilis in the salsa?

Solid recipe though, the tomatoes are what make it though. I find splashing out on the more expensive varieties makes all the difference.

I omitted chillis in the base recipe to make it kid-friendly and forgot to put them them in as optional.

Love it!

I have a similar Salsa / Pico de Gallo recipe that I add a some finely chopped garlic to aswell.
Scoop out the insides of the tomatoes if you want a drier, chunkier salsa.

Using your already made Salsa - Grab a couple of avocados, chop/crush them coarsely add some more lime juice and you've got Guacamole.
