have we settled on a cleaning schedule for the barrel?

Looks like a solution of citric acid and patassium metabisulfite is the way to go.

Couldn't find the potassium metabisulfite to buy. Homebrew suppliers were saying sodium metabisulfite was same thing but I had read that the sodium left a residue. ???

Just like Bleach and Vinegar DO NOT Mix together concentrated solutions of these two chemicals. You could well damage your lungs.

Be very careful how you dissolve the metabisulphite as as again it will give off enough SO2 to upset the old brochials.

Hadn't spotted the one in homebrewwest...out of stock atm.

I thought the sodium left a residue but maybe I confused it with the residual sodium?  ???

If there is no residue off either...and it will be getting dumped then it's not an issue I guess.
