Title: Cherries for kriek
Post by: guest2162 on November 14, 2019, 04:20:13 PM
Where do people get the sour cherries for their Kriek?

I've always been on the look out for cherries with a real 'cherry' flavour to make kriek or cherry old bruin but I don't know where you can get them in Ireland. They sell frozen sour cherries in polish shops but I wasn't impressed with the ones I tried.

Yeah, I found a site BD foods that sells whole fruits and purée, but they are quite expensive, especially if they don't work out so I was hoping to get some feedback from people who might have used them or similar

Holland and Barrett sell an American sour cherry extract - not cheap tho' IIRC: 2 for €16

Cheaper is the Polish Towicz sour cherry that Lidl and Tescos have been know to sell - also in Polish shops I'm sure

It's Lowicz (?owicz to be clear) and there is 3% of sour cherry juce. Rest is sugar, aroma, black carrots juce, acid regulator so it is very bad choice.

Yea, I have a bottle of that Lowicz cherry syrup and it's mostly artificial flavours. They do jars of cherries in syrup as well which I haven't tried.

I think the question needs to be rephrased a little: has anyone successfully made a nice kriek in Ireland, and if so, what cherries did they use?

Does freeze dried work? I came across a stand for freeze dried fruit at a craft fair at the weekend.

I'll dig out the name in a bit.

You can try to find in Polish shop something like this:

I've seen this already few times. It is 100% sour cherries juce without sugar.

Cool, thanks... plenty of options there... I might split out the batch into 4 or 5 demi johns and use different fruit sources in each and then compare them when they are completed... a project for the new year I think!

These freeze dried cherries look interesting alright. Not cheap though, 300gm is 28.50. I wonder what the equivalent weight of normal fruit is? i.e. Is 300gms of FDF the same as 600gm of normal fruit?

Also would freeze dried fruit be sterile? Or would it need to be heated with some water, which would obviously complicate the process.

Most soft fruits are 80 to 90 % water I think! So 300 dries could be equal to a lot more than 600 gms

See here:
https://en.wikipedia.org/wiki/Cherry

So sour are 86% water!
