Title: Pineapple cider/wine recipe?

Hey all, this is my first post here but i've been brewing about a year so have lurked here for a good bit already! This is a recipe I figured out from reading about other people's pineapple experience, I intend to start soon but wanted to get opinions on it beforehand in case any of y'all have any experience with a similar brew.

1 Gallon-
Primary:
4 litres pressed pineapple juice
Brown sugar til gravity is 1.070ish
1 Vanilla bean
Secondary:
1 diced Mango
Half of one Papaya

Thoughts? Planning on using this double snake cider yeast I have that I think has multiple strains in the packet, I just hope the abv won't be too high for it, could I possible be better off with a mead yeast? Also struggling to find Papaya so might use peaches instead, has anyone had success using peaches in their brew?

Have brewed ciders and some meads before, an extract ale and an extract lager kit, but this is a bit new.
