Post by: jonmuni on September 21, 2022, 01:56:33 PM
Hi guys,

Im finding many options for a Midnight Wheat alternative.

Does anyone have a tried and trusted alternative?

Cheers

If it's just for the colour, I've used cold steeped carafa 3 which I add late in the boil for black ipas and it works really well

Midnight wheat has an ebc of 1000 so carafa special 1 or 2 would work as a sub.

I find Midnight wheat and Briess's "Black Prinz" to be similar in flavor. (Black Prinz is basically Briess's version of a Carafa Special malt).

I've found over time that I just don't like the flavor of at least Carafa Special II and I prefer Midnight Wheat and Black Prinz.

I've also cold-soaked carafa special (and roast barley) in a coffee press and then just pressed it off a very quickly boiled the liquid and added it to a sanitized flippy top bottle to add extra roast flavor and color post fermentation and it's a nice mild roast character that way.

-I particularly like the flavor of Roasted Barley used this way, but it DOES increase the FG when you use it post mash.
