Curry Recipes

Looking through the slow cooker thread and it sounds like there is a few good curry recipes out there...Heres my two favorite.

The first is a little heavy on the ingredients but once you get everything you'll be set to make it many times over. The spice mix makes up enough for about three curries, so stick in it a jar for next time

Malaysian Curry
Spice Mix

10 Cloves
10 Peppercorns
4 cardamom pods
1 Cinnamon stick
4 Whole dried chilies
4 tbs Coriander seed
2 tbs Cumin seed
1 tsp Fennel seed
1 tsp Turmeric
1 Star Anise

Ingredients
4 Chicken Thighs, Skinned and boned and cut into strips
1 Red onion thinly sliced
2 Sticks of lemon grass outer leaves removed thinly sliced
3 Cloves of garlic crushed
1 Chili finely chopped
2 tbs of spice mix from above
Handful of mushrooms quartered
3 tbs oyster sauce
Tin of coconut milk
300 ml chicken stock
2 tbs of fish sauce
2 tbs of brown sugar

Method
In a wok on high heat fry off the onion, lemongrass, garlic, chicken, chili, mushroom for about 4-5 min.
Add spice and keep everything moving around the wok for about a min.
Add coconut, stock and oyster sauce ,simmer for about 10 min
Add fish sauce and sugar and simmer for another 2 min or so
Serve with rice.

Lamb Saag
Ingredients

2 Cloves of garlic
Thumb size piece of ginger
2-3 Green Chilies
1 Onion
750g Lamb pieces
2 tsp coriander seeds
1 tsp turmeric
2 Crushed cardamom pods
Tin of Tomatoes
300ml lamb stock
200g Spinach

Method
Blitz garlic, onion, ginger, chili in a blender to make a puree
In a casserole dish Brown lamb and set aside
Fry spices until fragrant
Add puree to spices in the pan and fry for about 2 min
Add lamb, stock and tin of toms put a lid on and let simmer for about 45min
Add spinach and put lid back on and simmer for another 25min
Take off the lid and continue to simmer for another 20 min
Serve with rice

Dempsey the first one is a real quick curry no need for a slow cooker.. Shane as soon as I have the new shed built I'll organise a brew day

I got it on Moore street, as far as I remember. The place is Indian cookware shop, sells a lot of stuff like cheap alu pots etc. It's called a Dabba Masala if you want to get one. It's on the Ilac wall, where the tobacco is sold.

They do look the part don't they :)

Is it ok to plug a mate's site? He was made redundant and has set up a business selling curry kits among other things. I must say the curry kit is well designed, including a recipe book and a nicely presented box of spices which would look well on any kitchen worktop, and any of the recipes I have tried worked out great.

Thanks Denzel I passed on your concerns, he said that he had only recently negotiated a deal with fast track to give nationwide delivery for €4.99 and due to an admin error the site hadn't been updated throughout, but was being sorted now.
