Boiled a ham this weekend in Saison. The spiciness of the beer and the sweetness of the malt worked so well.

People use cider, coke, ginger ale etc.. thought why not beer. Was going to go all beer and put some LME on for the glaze, but I wasn't bothered in the end. Just lashed a load of sweet jams and sauces together with some mustard and brown sugar on with a few cloves stuck in.

Definitely recommend :)

I'd normally use a mix of water and cider myself. I wonder would a bottle of stout be nice? Wouldn't be able to get my hands on a saison up here.

After boiling I stud it with cloves and make a mix of honey, mustard, dark sugar, salt, pepper and ginger and rub it over. Make a "tent" with 2 sheets of tinfoil and whack it in the oven.
