Bread Makers are great for doing the hard work on the dough making for Naans or any other dough. Can't recommend one highly enough.

I add a large Dollop of Natural yogurt per 500 g of flower and cut back on the water accordingly and Honey ( 1 dollop) 8) ( there's a bit of science in there,about helping the yeast) 

Oh! a small dollop of Garlic paste in half the batch ( or all of the batch) works a treat too!

At the minute just waiting for the milk to set properly. Still milk coming up when I dip in the aul finger.

Back on topic:

I think the curds finally set in the whey, so cut them into cubes and gradually brought the temperature way past the recommended 38 oc and waiting now for it all to settle. The 'cubes' are now a whole flaky mess, but we'll see what happens. Maybe the milk wasn't sour enough, or I didn't add enough rennet.
