Just wondering.

Because of a dead space where my grain will not reach in my mesh tun,  I am considering adding a couple of extra liters to the mesh for better coverage of the grains.

The recipe recommends 9L

What would happen if I added 11L  .

Is it a big deal?

You'll be grand. use 2-2.5liters per kg of grain and your MASH will be ok :)
have a read off this, it's pretty good:  http://morebeer.com/themes/morewinepro/mmpdfs/mb/AllGrainBrewing.pdf
There are also calculators out there, but they can be quite confusing

BIAB mashes with all your water so typically 30L water to 5kg grain. There's no downside to this that I've noticed
