Hello again folks,

Just an update....

I have a brew on since Saturday and it was bubbling like mad till maybe last Tuesday and then subsided to bubbling every few mins.

Today there has been no bubbling at all. I just took a gravity reading there and took a little taste and got a small bitter/winey taste...

Is that normal and if not can the brew be saved in the bottling process.?

All advice greatly appreciated.

Leave it for another week. Don't take any samples. You're making yourself paranoid!
