Title: Stoneground strong white flour

Just wondering if there's any interest amongst the sourdough bakers here in getting strong white flour, specifically stoneground white flour from one of the English mills like Shiptons http://www.shipton-mill.com/.

This would be 16kg bags for <€20. We'd need four people to get over the order minimum and someone to bring it in from Naas if ye're interested.

There's also a contact I have in Dublin city centre who can get any flour from the Marriages range http://flour.co.uk/

FYI on stoneground vs. roller mill flour read more here http://www.shipton-mill.com/the-mill/milling-and-grain/modern-methods-of-milling.

Basically with roller mills all the bran etc. is stripped from the flour as it is passed through sets of rollers and sieves at what may be high temperatures which impact on the nutrient content of the flour e.g. most wholemeal flour made in this country unless it specifically says stoneground, will have been white flour that then has the bran etc. added back in at the end of the process.

Although particularly in this country we're used to stoneground being used to describe wholemeal or brown flours it was also how  white flour was made in the past.  The additional step compared to the wholemeal we're used to is at the end where it is sieved to remove almost all the bran.

For organic and stuff like spelt the prices would be over what I've indicated above.

Edit - scratch that organic strong white would be <€20. Spelt is crazy dear as in >€80 for 25kg though. But that may be favourable compared to what you'd pay for small quantities in the shops.

Damien M, many thanks for the kind offer to do the pick up and drop off in town.  To make things more convenient for you I could offer to hold the flour for others if they could reach me in Drumcondra.

Would everyone on the list be able to get me in Drumcondra?  I'm by the train station there and have off-street parking. 

Re Eoin, will we make this group buy official, arrange payment etc. at the end of the month?  This would also give other members a chance to join in.

That's grand sure, although if I'm doing COD and you're going to the bother of doing the collection from leixlip etc. it makes sense for me to pay for it upfront with the company. How does that sound?

Beermonger, sorry to hear that.

Right lads with four takers, we are just a fraction under the minimum order limit (by €3.64) so if anyone knows anyone into baking please let them know.  I may put up a message on another forum just to see if there would be a taker there.

Another option would be to just give them €75 which divided by four would be €18.75 each, if they'll allow that.

Hopapotamus, the price for the organic is as listed in the first post so just under €18 for 16kg.

Let us know if you're interested and can sort out NHC Express to get down to you.  As the drop off point in Dublin I don't mind hanging onto it until someone is heading your way.

Great to hear it. For dropping off purposes can you indicate whereabouts in Co. Cork (Mallow/Bandon etc.) you are so members can indicate if they'll be heading that direction?

I'm down Kinsale/Ballinspittle usually once a month/six weeks or so if that's useful you can bear that in mind. I'm down tomorrow so probably be a few weeks before the next run. Generally have space for most stuff and willing to help out for anyone down there that might want something.

Just want to chime in here and say thanks to Damian M and all the other members who joined in this to make it possible.  Can't wait to get baking with it now.

I've used Odlums, Bacheldre Watermill, Doves and Marriages.  Each flour will work a different way in terms of how it absorbs liquid, some will be noticeably 'drier' than others. 

Apart from that there will be production differences for stoneground white flour with more nutrition/oils and a small amount of bran, germ etc. left after the sifting process.

I've been quite distracted recently with the death of a good friend, so I didn't feedback here yet.

I've only had a chance to do one loaf so far and all I can say is that this flour is very very tasty and does a really nice loaf.
I didn't do a sourdough, just normal fresh yeast and I'd highly recommend this flour, based on taste alone.
Even the smell of the cooked loaves is superior to the Polish stuff I've been using.

Not at all.  More than happy to do this, and Damien M was the real lynchpin of this handling the logistics for us.

Agreed on the smell, it is really aromatic even beyond the usual fresh bread smell.  I've had great results from sourdough and regular yeast breads with it.

CH I would also be interested in ordering this again when folks here are ready as I get through 16kg flour in about 6 weeks.

We did another one yesterday that had proved overnight in the fridge because it was so cold in the kitchen and didn't get done the evening before.

It really is far far superior, taste, crust, smell, everything.

Why don't you go for the 25kg bag cruiscinlan?
Do they do that size here at all?

Grand job, what about Galway delivery though? If you're interested my brother is coming up to Dublin in December and could bring them down.  Anyone else out there?

I've not heard of it myself here but have seen that its popular in the US.  That said its very hard to get whole grains here.

You'll get a few types, a wholemeal one will be 'razowy', and one marked 'Chlebowa 720' will be strong white rye flour.

Zytnia=rye btw
Razowa=wholemeal
Chlebowa= for breadmaking

According to Redmonds this is the organic strong white flour that they have from Shiptons:
F12%OP/ORG.16 - Organic trad. strong white flour no.4 (11% protein) SM, 16kg.

To be honest I'm not sure how much of a difference if any there is between these two:

aweisse, I've just updated the list to put in everyone's locations.

Once things quieten down after Xmas I'll see if our contact will be able to pick up and drop off to me in Drumcondra. 5 bags is what we need for the order anyway so we've reached that.

Aweisse.if you look back over the thread there was a drop to Cork so perrhaps see if that person does a regular run. For the previous order it was all dropped in Dublin.

I've checked the bag to see exactly what it says and its marked 'Organic Number Four'.  You can rest assured that if I end up with five sacks of Odlums I won't be too happy.

Ive used about 5KG so far and it makes lovely bread, its more dryer flour than the tesco strong flour.

cracked open the bag at the weekend.  Bunged it into the bread machine for a tomato and basil loaf and went to bed.  Woke up to a lovely loaf, well risen and very light and fluffy.  15.45kg to go!

16kg is only 28ish loaves allowing for wastage, dusting, feeding starters etc.  At 2-3 loaves a week its one 16kg sack every eight baking weeks!

Thanks to Damien for dropping this off to me. I did some baking yesterday and I'm seriously impressed- the flour glutenizes well and the flavour is better than Odlums. I did worry that the dough was a little sticky (even using the "magic number" 62.5%) but I was able to work it without having to lay further flour down. Left the dough to cold prove overnight and threw it into the oven this morning so everyone woke up to freshly baked bread...

Sorry Will, didn't have enough time to bake before BrewCon. Might do some simple bread rolls and bring them to the AGM...

It will be the price that is agreed when the order is put in. Collection points will be arranged based on the people involved. Where are you based??
The flower is Bakers quality and how you store it will dictate how long it lasts. Mine lasts at least 6 months if and can stop making delicious bread.

That's the wholesale price SkiBeagle.  Picking up from Naas allows a lower order size.  Foodstuff isn't VAT-able so thats the price payable.

White flour has a longer shelf-life than brown flour as it has no bran content, 12 months anyways.

So I have managed to get a response to my enquiries, though it did take a few goes, and I can now confirm prices as follows:

Organic Strong White Flour No.4 11%, SM, 16KG - €21.30
Organic Light/Medium Rye Flour, SM, 25KG - €32.80
Raspberry Puree/FRZ, Capfruit, 1KG - €12.70
Strawberry Puree/FRZ, Capfruit, 1KG - €9.20

So, the eagle eyed amongst ye will notice an increase on the previous rounds prices. 

Can everyone who's interested in going ahead please confirm what they would like please.

I will PM bank details to people as it's the likely easiest way forward?

The closest appears to be "red sour cherry (Griotte)" but, not knowing anything about cherries I have no ideas of this is what you're after?

Hi all, sorry for the delay in getting back. I'm working in Dun laoghaire and living North Wicklow. Not 100% sure when I can get to pick the stuff up during the day. If anyone else can do the collection I could get it in the evening at some stage and distribute.

Lads I have another solution that may sort the group better as it does not require a pick up in Naas.

Bread Naturally in Raheny will sell a bag of flour to the public at near the same cost I've been quoted.

All you've to do is ring up and ask for it in advance as they don't hold lots of stock. Ask for Simon, he's the owner.
