Title: First time smoking meat : need advice

Hey guys, I'm on the hunt for some advice,

I plan on smoking some meat but I'm a complete newb. I've watched a ton of youtube videos and picked up what I could but I'm thinking of cheating a little .

Is it be possible to smoke a brisket for 2 hours, wrap it, then move it to the oven for the remaining 9 or so hours at a low heat? 

Also, I don't own a smoker yet, was looking to spend €100 - €150, any recommendations?

I've done this with Pork Shoulder and Ribs, so dont see why it would be a problem. You wouldnt want smoke on it for much more than 2 hours anyway.

Nice one, I think my major concern is being able to keep the correct temp over 9 hours in a cheap smoker,
also I've no cover in my back garden and we all know what the Irish weather is like!

I have a big poppa smokers diy kit but the homebrew mania one looks attractive too. I havnt tried brisket because of the time commitment, but 9 hours seems short from what I've read online.

Have you tried building one Aidan. I remember watching  Jaime Oliver show and his mate Jimmy built one for about €60 euro. There's also a few YouTube videos for building simple ones using terracotta garden pots I think

I seen these bradley smokers, table top job for €250 - more than I wanted to spend, though very tempting! As it's very handy and you could smoke in your house!

Yeah I think 12 hours or something, it's just keeping the temp for that long is my worry

If your gonna smoke it then finish in the oven try get it three ours on the smoker..most advice out there is the meat will not take on any more smoke flavour after three hours...go easy on the wood...you dont want it to taste of bonfire...i usually put three chunks in first hour and one every hour for three hours after that...if using mesquite only put two in the first hour..its got a strong flavour

Ive built two of those. Epic. Hold temp like a champ & very efficient on charcoal. Deadly for overnight smoking as they dont need any babysitting.

I had a brinkmann gourmet smoker before my UDS.  It needed a few modifications to see it operate right. Fire gasket tape all over, new fuel basket, made feet for it, fire rope & high heat sealer on the lid, thermometers, air vents on lid & bottom.

If you want the "rolls royce" option, you could do worse than the Weber Smokey Mountain.

I've had my eye on one of these beauties for a while now, but I haven't pushed the button yet. 3 different sizes available. They get great reviews and hold their heat extremely well due to the quality of the design/seals. Do some googling on them.

That are available in Ireland, but aren't normally stocked in the same places that sell Weber grills, though Weber stockists can easily order them in. I've made enquiries before.

Got a few from a farmer who collects spent grain from work.  They need burning out & half day of grinding with a wire brush.

If I was to make another Id buy a new stainless steel barrel from Quitmann O Neill in Portumna. I mailed them before & got no reply. Probably as I only wanted one. Maybe a group buy on stainless steel barrels for smoker builds? :)

Those BPS look the business!

I bought one of these a few months back. I got the old model from a UK company that was selling them off cheap as they were shifting them before the new stock arrived. Think I paid about €200 for it. It's similar to the Weber but a fair bit cheaper.

Gonna pick up two of those barrels this evening, the lady selling them is close to me. I'll post pics later if ya like CH? Looked at "Daddy Cooks" how to video on YouTube and was inspired to build a uds. Where would you pick up the expanded metal sheeting here? Can only find galvanized sheets online.

I've a 47 webber smokey mountain...its a great piece of kit...However after seeing eanna's BDS in action if I was making a first time purchase I'd differently go that route instead of the smokey mountain

This is the 18" model? If you were to buy a SM again, would you get the same size again, or go for the bigger/smaller model?

Yep it's the 18"..mid sized one.. It's perfect for feeding a family but not so good if entertaining.. I can smoke four large racks at a time.. Five at a push.. Takes a full shoulder no  bother.. I've got it nearly 8 years and at the time they didn't produce the 22"..if I had the choice I would of gone bigger.. I regularly borrow a 22" and I'd like to have the extra space..definitely wouldn't go the smaller model .heres the two side by side

(just as an aside, LS, you're  a brave man growing bamboo in your back garden. It took me 3 years to get rid of the stuff from our garden, and after that it just moved next door and now laughs at us over the neighbour's hedge)

Burning out a barrel as I type here (for the second time), going to get a wire brush for the angle grinder over the weekend and give it a good going over. Those barrels in your previous link are perfect. Cheers for the heads up.

No worries I just looked at one of their vids and they look easy enough to do once you have em burnt off. What type of paint do you coat them with afterwards?
Lidl or Aldi had wire brushes for drills you just need their grinder for them tho

I will be next month. I'll be picking up one of those barrels. I might be able to get another one or two into the estate if I drop the back seats.....

I got mine through parcel motel. Had to collect in their depot in finglas as it was too large for the boxes. I also got an extra rack for it on Hop Bombs recommendation. He was spot on with that idea.

For paint I used 3 cans of matte BBQ spray paint. Gloss would have been better I'd imagine.

I'm smoking for the Liffey brewers this weekend, I'll try to take a few pics.

BPS is sold out. I just bought the same kit from Bristol Drum Smokers on twitter. I think he is the one buying up all the BPS kits.

Im putting one together for a mates wedding present this weekend. Lucky to have a virgin unlined & unpainted barrel this time round so no need for the extra days work burning & grinding off lining & paint.

You dont need to buy a kit to make a ugly drum smoker. Just look at their facebook page for inspiration. Everything you need can be bought at the hardware shop & some old bbqs


Anyone any interest in stainless steel new barrels?  If we can get a few im sure a supplier would sell us a few.

Wind is the only issue. It needs shelter so you dont burn through your fuel too quick. Never had issues maintaining temp even in heavy rain & cold.

No, all lined. In your experience how many burns did it take to remove liner? I've done two, but I don't think my fires were big enough. Outside is paint free, inside is patchy.

One massive fire. Pallet wood to start, any 2x4s I could lay my hands on +  a net of oak logs in on top. Then hit it pretty hard with the wire brush grinder attachment. When the whole thing was put together I did a smoke with no meat on to season it.

One massive fire. Pallet wood to start, any 2x4s I could lay my hands on +  a net of oak logs in on top. Then hit it pretty hard with the wire brush grinder attachment. When the whole thing was put together I did a smoke with no meat on to season it.
Had a decent fire with bits of pallets, old garden furniture and a set of headboards off old bunk beds. Definitely will go again with some logs too, it needed something extra. Cheers.

300e a piece for tight head stainless steel barrel.

600e a piece for open top clasp lid stainless steel barrel.

34e a piece for mild steel barrel, no liner & waterbased paint job on outside (would burn off easy).

Yeah they'd be fine. At least you know their virgin barrels, have no liner & werent ex oil drums or something. You would need to prime the outside & spray with high temp paint to stop it from rusting prematurely. It will eventually start to pit & rust though, they all do. Hence the search for an affordable stainless steel barrel.

Few lads on done deal with cheap used barrels that might suit too depending on your location etc.

Drum dims are 60x60x90 - 10kg.

Ok, so back to going to Wexford and buying one for 8 euros then.

Jacob, I'll be going down sometime after payday, If anyone else is interested let me know, I'll check the dimensions in my estate and see how many I can fit in the back, I suspect I'll get between three and four in.

Only thing with Bradley smokers is you have to buy the wood pellet discs off them.. If they ever go under you'll not get the fuel.

Was interested in Bradley till read may reviews saying that heat element is the weakest link of that construction and have to be replaced very often.

I put this together yesterday eve for mates wedding gift. 3 hours work. No burn out needed on the barrel as its unpainted & unlined.

It was a tight top barrel so had to grind it off very carefully so I could still use it for the lid & that it'd seal properly. That alone took an hour & 3 grinder discs.

Its an ex glycol barrel. Came in with the new brew kit at GBB. The minute it was emptied I hid it :)
