So Im mucking around with a Honey Ale recipe and Im not sure what yeast to use.


  • 2.81kg Irish Craft Pale Ale Malt - 71.5 %
  • 0.37kg Amber Malt Grain - 9.4 %
  • 0.25kg Chateau Bisucit malt - 6.4 %

  • 25g Goldings, East Kent - 60min
  • 25g Fuggles - 15min
  • 20g Bramling Cross - 0min

  • 500g Honey  - 0min
Est Original Gravity: 1.047
Est Final Gravity: 1.011
Estimated Alcohol by Vol: 4.7 %

Could anyone help me with what yeast to pick

I would go either with a Belgian yeast wlp 550 or completely in a different direction wlp 001. I made a honey beer last year with 001 and it worked quite well but with the hops you are using a belgian yeast would work well too.

Let it ferment warm to about 25c and you'll get a nice Belgian profile

1 is good, 2 is better, 3 is enough & 4 isn't half enough

Use s05 or Nottingham and you'll have a nice clean ale

If you want clean us05 or Nottingham will do the job but a bit of flavor for the yeast can add a lot to an ale looking to showcase honey. Google some of the English ale strains. Wlp005 or 007.
If your not looking for a lot of banana but still the Belgian notes wlp500 at around 17 will be delicious.
