Evenin all, I had a go at my first all grain brew yesterday. I went with the BIAB method as I thought it'd be the least complicated way of getting into all grain.
I wont bore you with all the details but heres a quick rundown of my ingredients and what I did with them.

5kg Maris Otter
200g Carapils
150g Chocolate Malt
250g Crystal
60g Styrian Goldings
60g Fuggles
Safale s-04 Yeast

I mashed at 69 deg for 60 mins (added 5.2pH additive at start of Mash)
I boiled for 60 mins adding 15g each of the hops on 4 occasions -  at start of boil, 45 mins, 30 mins and 0 mins.
I added my wort chiller and a whirlfloc at 15 mins before end of boil.
Took 25 mins to chill down before adding to FV.
Pitch yeast and shes now going like the clappers!!!!

Its an English Ale, pretty much a Hob Goblin Clone.
I wanted to use Danstar Nottingham Yeast but couldnt get my hands on it.

Haven't used s04 myself but heard it can be a poor attenuator so watch out for that.
There are a few of us that have plenty of notty and could sort you out. Stick a request up if you're stuck again.

I did three brews with S-04 and the first two finished very high at 1.18 and despite taking the fermenter for a walk and moving it to a warmer room I could not get it to finish. As a result I ended up with two gusher beers as when I primed the left over un fermented sugar increased the co2 level above normal. The third one was a stout that finished fine. The high alcohol of the first two I think was part of the problem as I think there was insufficient yeast.

I'd agree. It was the taste that put me off S-04.

LordEoin

S04 is great for a Guinness clone.

What's that connection off your tap on the keggle? I need something bigger and that looks like the job  :)

The airlock has pretty much finished bubbling already, I'll take a reading tonight to see where I'm at.

LordEoin, I'll send you the links to where I bought the valve etc later on when I get on the laptop.

Cheers Will, had to re-edit my original post a few times to get the pictures orientation correct - easy  :D

I can only live and learn with my choice of yeast, hopefully I don't dislike the taste the 04 gives off considering there's 24.5 litres of it sitting in my FV!!!

Hope it's not too cool or your mash won't be very efficient  :P
