Given I brewed the wrong beer I suppose I can't be talking :) looking forward to seeing if any of the wits taste like Hoegarden.

I'm at my wits end with my brewing lately.

I so badly need temperature control or just brew to the weather! I should have brewed a wit! Not sure if I will make this, I have a flight at 5am or something daft the next morning.

yeah... In Rossa's understandable absence, I'm planning on "doing a Rossa"..
I don't see a wheat (Weiss or Wit) beer on the list. What gives?

Apologies. I just couldn't fit it into the schedule. But I am bringing something Belgian.. and spelt is a type of wheat..  :-[ :P

Ronnie, I don't have temp control either. I was sick of making shitty beer during the summer months, so a couple of years ago, I decided to do exactly what you suggested - brew with the seasons.

During the summer months, I do turbo ciders, meads, saisons, other Belgians. It's great.

The Wit had stopped a bit high though maybe my mash tem may have been a bit high.
Seemed a bit light on flavour.
It had been in secondary for 4 weeks expected to drop from 1.020
After the first 2 weeks there was no change in gravity so I re pitched.
left for another 2 weeks but I don't think it moved at all.
I upped the temp to 24, corney in a bucket of water with an aquarium heater, for a few nights nothing, so after 2 nights upped it to 26.
Went down to put it in the fridge and put the gas on it after another 2 nights not expecting any change ago opened the keg to test the gravity and lo and behold there was a krausen on top. and the beer had dropped another few points 1.016, the flavour also improved.
The temp must have dropped a lot lower at night and stalled the yeast.
That was last night hope it is finished and another few points lower.
I have a carb cap how long would it take to carb a bottle full if I just connected to the gas and just left with no agitation would like to have a sample ready for Thursday even if its a couple of points to go.
Can leave the rest to finish in it's own time

I'd say you could carb a bottle in minutes. Turn on the gas and roll the bottle to let the co2 absorb, they wlthry do when they want to rapidly carb a keg.
Fermenting: IPA, Lambic, Mead
Conditioning: Lambic, Cider, RIS, Ole Ale, Saison
On Tap: IPA, Helles, Best Bitter

Was think of doing that to give the extra time to the beer.

Chill the beer in advance as it helps with the Co2 absorption.

  So the plan I'll give it till Monday or Tuesday, flush a bottle or 2 with co2, fill the bottle leave it in the beer fridge to chill. On wed connect the bottle up to the co2 give it a bit of a shake for a few mins and leave on gas till ready to go on Thursday.
