Which yeast for the GB cider?

Hi,

I have done a lot of reading about the different yeasts available and recommended for the group buy cider. I am new to making cider so I'm not going to go down the au natural route so I'm trying to choose between 3 yeasts I have.

I have 3 sachets - notty, s04 and safcider.

I have read they are all good in their own way but could anyone lend a more experienced word on which is most suitably to leave residual apple flavour and which is bested suited to a medium dry style?

I am leaning towards s04 at the moment.

In a recent blind trial Notty came out the best.

If you have more than one container then try a couple of different yeasts.
Remember: The Nationals are just round the corner - time to get brewing

Your so4 and notty are different strains of the same yeast, (saccharomyces cerevisiae).
Your safcider is a different strain altogether (saccharomyces bayanus). If that helps.

I did 3 ferments last night one natural. Two with saccharomyces cerevisiae (all very happy this morning) that said if i had have had a packet of bayanus i would have done four ferments. Anywayway best wishes with it.

I ended up going with Notty. I sprinkled it on top rather than rehydrating it as I was in a bit of a rush but I think it should be fine.

And now the wait begins.......
