Check out a book called "booze for free". Looks good but I haven't done anything out of it yet.

Wild and Free by Cyril & Kit Ó Céirín was originally printed first in 1978 but was revised recently and has a new introduction by Sally McKenna. It has recipes for wine, mead, jam fritters, pies etc made from fruit, flowers and plants which can be foraged in Ireland. It is a magnificent book in my opinion.

Another good book which I have in my collection which deals specifically with brewing and is divided up into 4 seasons is - Brewing: A step by step guide to making beer, wine and cider by Jack Thompson
