Title: Dial thermometer 2 degrees off STC

While brewing today I realised that my STC100 probe and my dial thermometer are out of sync by about two degrees at high temps even though I calibrated both to 0 degrees in a mug of ice and water. I'm going to just stick with what the STC is telling me for now in the interests of consistency but which one do people think is more trustworthy in the long run?

Try and do a calibration at 40 60 and 80
Dial thermometers are very tricky to read and they fail like mercury thermometers in the long term from all that up and down
