Would this mean the planned informal competition would have to be rescheduled also? I would not mind this as my beer will only be bottled a week by then.
I would suggest reschedule to the first Thursday in September if that works.

I'm at my wits end with my brewing lately.
I so badly need temperature control or just brew to the weather! I should have brewed a wit! Not sure if I will make this, I have a flight at 5am or something daft the next morning.

Ronnie, I don't have temp control either. I was sick of making shitty beer during the summer months, so a couple of years ago, I decided to do exactly what you suggested - brew with the seasons.
During the summer months, I do turbo ciders, meads, saisons, other Belgians. It's great.
The Wit had stopped a bit high though maybe my mash tem may have been a bit high.
Seemed a bit light on flavour.
It had been in secondary for 4 weeks expected to drop from 1.020
After the first 2 weeks there was no change in gravity so I re pitched.
left for another 2 weeks but I don't think it moved at all.
I upped the temp to 24, corney in a bucket of water with an aquarium heater, for a few nights nothing, so after 2 nights upped it to 26.
Went down to put it in the fridge and put the gas on it after another 2 nights not expecting any change ago opened the keg to test the gravity and lo and behold there was a krausen on top. and the beer had dropped another few points 1.016, the flavour also improved.
The temp must have dropped a lot lower at night and stalled the yeast.
That was last night hope it is finished and another few points lower.
I have a carb cap how long would it take to carb a bottle full if I just connected to the gas and just left with no agitation would like to have a sample ready for Thursday even if its a couple of points to go.
Can leave the rest to finish in it's own time
I'd say you could carb a bottle in minutes. Turn on the gas and roll the bottle to let the co2 absorb, they wlthry do when they want to rapidly carb a keg.
Was think of doing that to give the extra time to the beer.

Chill the beer in advance as it helps with the Co2 absorption.

So the plan I'll give it till Monday or Tuesday, flush a bottle or 2 with co2, fill the bottle leave it in the beer fridge to chill. On wed connect the bottle up to the co2 give it a bit of a shake for a few mins and leave on gas till ready to go on Thursday.

I really liked craiclad's 4% wheat beer. That's some result considering it was his first all-grain brew. I've nothing against session beers, of course, but I'd love to see that recipe and process scaled up a bit in terms of gravity. Just to see how it compares to some of the common commercial wheat beers.
The elderberry and juniper mead from bachus was outstanding, as was the "black licquer". That was some range of styles we had last night!

Bubbles I'm glad you liked my offerings! If you want to mess around with the recipe for that session weizen I'll throw you some notes here.
50% wheat malt to 50% pilsner malt, mashed at 67C to a gravity of 1.040 (in my case at least). About 13 IBUs from magnum hops, and fermented with 3068. I had no temp control at the time, but I would guess it was a fairly constant temp somewhere between 18-20C.
I'd be interested to see how it works at a higher gravity as well, I absolutely love wheat beers so I'm likely going to try and really nail down a quick and dirty house hef over the next couple of months. I have an extract version going with WLP380 so hopefully that gives me some useful info.
I remember at the end of the night there was some discussion of the best way to bottle from a keg (on the cheap). Have any of you ever used something like this?

Yeah I've done that before, but I found the tap a bit fiddly. Now I use plastic bottles with a carbonation screw on top and a rubber bung on the end if I want to fill a glass bottle. Connects to gas first to purge, then onto the beer.
