So I was making my entry to the Smithwicks competition today. But, I managed to screw up one important ingredient: Chocolate Malt, so now my winter ale looks like a chocolate stout!
Here's the recipe. I was supposed to add 91g of chocolate malt, but i added 500g! Anyone any idea what this might turn out like, and if I can still enter it into the competition?
4kg Maris Otter
500g Chocolate Malt
20g admiral 60min
10g admiral 20min
20g williamette 5min
100g wheat malt
150g crystal malt
200g special B
300g honey
US-05
Dry hop williamette 20g
Spice Tea (Cinammon, Ginger, Vanilla Bean, Orange Peel.
It's probably totally screwed now!
Apparently they don't want a stout so that might be a problem. Sure just call it a Porter. They'll be none the wiser 😉
500g could make it too roasty and astringent. You'll find out in a few weeks ;)

It should be a good roasty porter. I think with the vanilla plus the special B and crystal it could be quite nice.
Me thinks too much chocolate malt. :(
Nooooooooo...I'll probably drink it all anyway :-)
I'm gonna drive Diageo into liquidation if this 6 grain beast gets through
Only 200g of chocolate any more and it's a woodbine.

Having said that FWH were pitiful i measured them twice just to be sure, pimple and elephant comes to mind and I don't ever remember using so few for bittering

They'll be delighted at the hop frugality
Always felt that the amarillo hop addition in their pale ale was a wave a cone over the boil kettle then tie a string to it and give it a dip or two. :D
Ah dempsey dats not fair comment....dey use pellets :-)
found a few chocolate stout recipes on beer smith using over 450g in a 5 gal batch with 4/5 stars, so there's hope yet!
I'm sure it will taste alright but it's gonna be dark :(
Chocolate malt varies a lot. I only use the really pale stuff now that I've gotten through my 25kg of fawcett dark chocolate malt. Ugh!

Aah yes I remember it well. At Liffey meet ups you would offer it and when someone says I'll take 500 grams you would say your getting 2 kilos :D
Just for the record, it turned out well despite the 500g of chocolate. I added 900g of treacle to the fermenter and its lovely
What sort of roast note does the chocolate give in that quantity? Nothing acrid or harsh coming through in the flavour? Planning an extra stout shortly where I push the chocolate, but wondering about it's character in large ammounts.
I'm not getting any harshness, this could be masked by the treacle perhaps? I can give you a bottle if you want to try it out.
Yeah if our paths cross over the next month, I might just take you up on that offer, though it sounds like it's working out. I've tasted sharp notes from roast malts before - you can't miss it when there's too much. It's like drinking from an ashtray :D
