Put Sunday 24th Feb into your calenders -
for a co-op brewday -
Jacob has really got me going on doing a Nelson Single Hop IPA, and we could get Jacobs Gas system over as well - do a double brew
We may even have a bit of a Bar-B-Que - nothing like a bit of horse to break up the day - maybe Nigel can help us there (Zing !)
Anyways - I dont really mind what we attempt to brew - but I have booked the kitchen / Garden and Shed for the day !
I've ordered the nice weather what else can I do?
Camera? Check
Thirst? Check Check
Would love to come, but have 2 birthdays and a house warming the Saturday :P
Here's a list of recipes that I have in mind :
1. International Homebrew Project 2013
2. Smoked Porter
3. '3' Grains (Pils/Wheat/Rye) Weizen
With the 3rd one we could use some wlp300 slurry James :P
Lads, I've got a hefe in the fermenter at the moment and I'll probably be bottling in the next week or so. I'll bottle up some WLP300 slurry for you if you want?
Conor.
Sounds like a plan to me :)
So this will be the first NCB co-operative brew day.
Now apart from lurking with long lens ( papparazzii style ) and talking nerdy science ( ad. infinitum ) what else can I do to contribute in a positive way??
What about food? Sloooowwwly cooked steaks??
I once cooked a 2.5 kilo sirloin for about 4 hours and it was still rare!
Ok by me , if OK by James then Will is doing the steak!
4h and you call it slowly cooked??
Last time it took me 7h to cook pork shoulder :P
Best piece of pork I've ever had!
Btw. what do you think about those tshirts? :)
Very Smart 8-)
Quote1. International Homebrew Project 2013
2. Smoked Porter
3. '3' Grains (Pils/Wheat/Rye) Weizen
Are we going to vote for one of those or do we want to
include other recipes? :P
If I've numbers I and a few days notice I'm sure I can come up with tasty for a BBQ
Did somebody mention slow cooked shoulder of pork :)
QuoteDid somebody mention slow cooked shoulder of pork :)
Yep, for 7 hours. Did I mentioned lovely gravy made from all the pork fat/juices and roasted vegs?

That's just food porn chat,I luuuve slow cooked pork and all the trimmings. :)
This is all confirmed now ..
Do we all want to brew the same recipe or is that a bit boring ?
I probably need to get the yeast sorted soon -
unless of course its WLP001 or WLP300 which I have slurry that is less than 7 days old.
How many people are brewing ??
So far
1: Partridge
2: Jacob
Any one else want to brew ? I dont mind either way.
Let me know how your sorted for ingredients. Have a fair bit in stock. Someone fancy doing something ott ? Big Doible IPA / barleywine/ imperial stout and split the cost?
Decided then! I'm going to brew '3 grains' :P
2.00 kg Pils
2.00 kg Wheat
0.50 kg Rye
0.10 kg Crystal 33
0.50 kg Vienna
James WLP300 would be my yeast choice :)
Still not sure about hops :/
I am not brewing.
But will help out with the cooking - is it going to a slow roast pork?
Photos naturally.
@Jacob - if you are use rye then why not lean towards a Roggen?
I might even have some smoked rye! Will check
List Required!
How many people are comming and what are we doing??

Just want to mix wheat with rye to see how far will it be from the roggen. If you have some smoke rye malt I would be interested in brewing smoked roggen next time.
Ill bring my hop rocket, Can bring my barley crusher if required!
also any grain hops or yeast needed let me know.

@nigel once we have an idea of numbers how much notice do you need to obtain a shoulder?
If its not pork and then its a large hunk of steak - same question!
If I go to a decent butcher in these parts then they need a good few days notice so if nigel can source the meat then we split the cost with him!
Assume if there's about 5 so far then on the day maybe about 10
@james: Is the family away for the day?
@all NCBrewers: @all newcommers to NCB: This will be a great day of brewing, drinking, and pigging out ( assuming no beef (horse))
@james: Many thanks for hosting this
@Demspey: You and Tube comming? (I believe from the illustrious leader it may be your turn to drive? ) If not Malahide is on the Dart, and its only 5 mins walk to James' (if you know the secret short cuts)
Beef is not a problem. Have some top stick in at the moment. Pork may be a problem.
How about a slow cooked for rib of beef on the bone? :p
QuoteBeef is not a problem. Have some top stick in at the moment. Pork may be a problem.

Don't worry - I didn't pay that for mine !
At what time are we planning to start on Sunday?
Also, James could you PM me your address please?
Other question. Are we going to put an info about Co-Op brew day on the main page?
Pm address as well please.

The Family are planning to be away - they might be popping in and out - but they are generally out.
I have the place booked from about 9 am to 4pm
I think that should be fine
What time do you think we should start ??
Is 9 too early ? Maybe 9:30 / 10 am ?
I dont mind either way - I suppose people will be drifting in as the day goes on...
All welcome
Should be a blast.
Snow flurries forecast for week-end
I hope you mean coming off the boiler !
Do you fancy coming round John - I believe we owe you a lunch !
Your such a messer - the forecast is for
6C, low wind and 0% chance of rain !
Perrr fect for brewing !
Maybe not for a barbque - but what the heck - we set the trends at the NHC !
For the slow roast beef 9 am is looking favourite!
Also There is a small Rugby Match on in th eafternoon!
No worries - I set the start to 9am !
1: Partridge
2: Jacob (3 grain beer)
3: Will ( &photos)
4: Cahalbrua
5: Nigel

QuoteNo worries - I set the start to 9am !
OMG, I will probably be sleepwalking down to Chalfont!!
The last time I saw 9 on a clock it was the 9 o'clock news on the BBC (PM!!)
However, looking forward to a great day out
Ok its in the Calendar !
Hey folks,
new to the site, I was just wondering where this is on? Mohr fancy a visit if that's allowed.
@BeZ
I'll repeat after James
QuoteAll welcome
Should be a blast.
We'll be brewing in Malahide. PM Partridge9 for details if interested.
QuoteI hope you mean coming off the boiler !

Sorry I have a date with homebrew, a rugby match and a blazing fire, thanks for the offer though
Folks, looks like we are sorted with the food but what about drinks? :P
I don't mind drinking James's finest but don't think that it will be fair to our host.
What about if we'll bring something for tasting?
I can even bring a cornie of Belgian Pale Ale (~10-15l).
@Will: that's the same you got from me last week. Is it good enough?
@James: will you have some free space in your kegerator to plug it in? (If not I can bring picnik tap with me, it should be cold enough outside to keep it chill :P)
QuoteFolks, looks like we are sorted with the food but what about drinks? :P
@Will: that's the same you got from me last week. Is it good enough?
Yes please it was delicious.
The Beef is leading the timeline. It needs about 6 or 7 hours slow cooking. If we aim to eat at 4 then thats the start off it. As I am hust up the road from James I will be down with him from 9. James will probably start a brew off at 10 or 11 and so times are pretty flexible What do you think James.
PS: @Tube was just having chat with Dempsey - suggested you get the Dart or the commuter up to Malahide, then either phone and one of us will pick you up, or walk( :o - 5 mins) or a taxi ( €5 )
Will need to know numbers by Friday for the beef.
Quote
That was until I spotted that it's a Sunday, which is a school night! I thought it was Saturday, so I probably won't make it.
School Night?
We plan on being finished by 5 or 6 at latest? Its up to James and the family when they want us out!!
Re: The beef
Have just met up with Nigel. He will get the beef to me on Saturday so we can get it on early. The rest of ye can have a lie in.
When do you think we start the brewing James as that is what most people are interested in?
QuoteAre you seriously starting at 9am?
Your welcome at any time ;)
Sounds like a ball.
Might make it after all.

Great stuff - got the RO system yesterday - jeasus looks complicated!
Have to say still undecided on the brew -
was talking to cathal about possibly doing a belgian.
I have to say - with the WLP300 ready to rock -
Maybe the easiest is to do Jacobs brew - the three grains.
Do you have spare rye Jacob ? I have wheat and Pilsen malt.
Cathal - have you made you mind up if you are brewing or not ?
Its does'nt really matter - completely up to you.
QuoteHave to say still undecided on the brew
What about IHBP 2013?
QuoteDo you have spare rye Jacob ?
:(
If your thinking about a Belgian how about a Belgian saison? Ill be racking to 2nd tonight or tomorrow so plenty of fresh yeast.
Right I have the beef put by. Looks delicious. Will be delivering to Will tomorrow so final numbers would be great do decide how much of this mouth watering beast we need.
Quotehow much of this mouth watering beast we need.
All of it!! 8-)
Hahaha done :P
I pm'd Tube, Dempsey and 3 newbees
Tube just mailed back saying that he'd pm'd you.
Didn't actually tell me if they were comming!
Well we should have loads. It's about 3.5 kg rib eye
James -
yeah ill do a brew if you think theirs the space, also if theirs a slow roast on your bbq i could bring my portable cadac bbq incase anyones hungry while waiting.Do you want me to bring any food, salad etc.
Nigel -
If you have some yeast ready to roll that would be great, what specialty grains did you use for your saison, looking at a saison recipe here that calls for cara vienne and cara munich have'nt got either.
Here's what i do have if anyone wants to swap for something more suitable for a saison.
Munich
roast
flaked
chocolate
black
amber
peated
biscuit
aromatic
wheat
torrified wheat
cara red
Would aromatic or biscuit be useable ?
Jacob -
I brought a keg a short distance up the road to a party on day of party and it was pouring more than half foam.
might be an idea to get the keg over on saturday.
Ill bring some bottled stout and AIPA

Yea - of course there is space in my kegerator for your beer !!
That would be great - I am a little low on beer - brewing for a wedding - so that is very much appreciated !
@Cathal -
I like all those grains !
@Nigel -
The Saison sounds good - what was your recipe - probably easier if cathal knows what to bring.
As I said - I have pils / wheat and pale ale - oh I have a lot of crystal as well ;)
Pale, Wheat and some Vienna / Munich is what i used. nice and simple. I used elderflower and a small amount of magnum for bittering. I have some vienna if you want me bring some along.

Good idea. Will try to drop by with a cornie 2morrow then.
I'll bring over a keg of cider.
At the moment its 2C so I have just put the milk in the fridge to warm up!
A keg outside over Saturday night will be colder than in the Kegerator.
I will bring the gravy making bits and pieces.
Also some onions/garlic/mustard/horseraddish(made from a faller at Leopardstown) etc.
What are we having with the beef? Bread rolls, Burger Buns?
Will

And todays forecast ahem :o, I also deliver post in Kerry ;D
"The cold and mostly dry weather will continue on Saturday night, Sunday and for much of next week. During this period it will be mostly dry with sunny spells by day and with clear spells at night. However
a few wintry showers of sleet or snow are possible in coastal counties of east Ulster and Leinster on Saturday night and Sunday"
Wear woolies chaps I'm sorry I cant make it, Nigel I gave Will 2 items for you, and a Donegal blonde for you all to try, interested to hear all your thoughts on that one. Brendan the Head Brewer will be selling it in The B&C in bottles and promised to bring us a case down!!
QuoteWhat are we having with the beef? Bread rolls, Burger Buns? Will
Little too late, but next time will bake some bread.
In that case bread rolls would be my choice :P
You can never go wrong with a flowery bap :)
QuoteYou can never go wrong with a flowery bap :)

Have just checked my malt stocks!
For some reason (pissed while ordering, maybe) I have found 4 x 500 gms of Roast Rye. Will bring a few bags tomorrow.
Sorry guys would not be able to make it :-[
So after a snowy start we got 3 brews on. The beef was gently marinated by hail/snow every time Will checked the BBQ. When our illustrious leader the Mighty Tube arrived the sun came out! (IT must be true what they whisper about him: "The sun truly does shine o o h a !")
A great day for all and much thanks to James and family for hosting us:

Looks like a nice joint , but who was avoiding horse with 2 lonely sausages :)
What did you guys think of the Donegal blonde?
The Beef look's awesome,I say it went well with the beers. :).
QuoteLooks like a nice joint , but who was avoiding horse with 2 lonely sausages :)

The two sausages were kept for Tube!
The DB went down a treat, very 'un-lagery' in the BEST possible definition!
Malty and with floral hops but light in colour and crisp on the palate. It was excellent!
Good food and great beer. Great day out. Cheers James and family for a great day. Must arrange a night up in mine soon.
Few more snaps ! Great day -
thanks to all who came along -
Its interesting to hear how others brew the same beer - learnt loads.
Thanks to Nigel for organising the meat and thanks for Will for spending the day cooking it !
Great day! Looking forward for next co-op!
I thought the beef was supposed to be "Slow" marinaded not "Snow" marinaded!!
