Hi all,

I've recently come home from a 5 year stint in NZ where I got into home brewing. Ive been at it for a bit over a year now with about 12 all-grain (and 2 extract) brews under my belt. I like most beer styles and am keen to try as many different styles as possible. Though I will admit when I reach into the fridge my hand will probably land on a hoppy American styles Ale (duck while chair fly toward face!!), a German Doppelbock or a Belgian Wit.

My brewing set up is a bit of a homemade Frankenstein job started when I naively attempted to make a one vessel wonder... So I have a 50l ss vessels and fitted it with an out flow valve (bazooka screened), internal heating element, a removable false bottom that sits on legs elevating it above valve and heating element. I use a ss immersion chiller, wort pump and build my own stir plate and STC-1000 temp control box. Up 'til now I have had to drain my wort into my fermenter, post-mash, so I can remove the grain and prepare the vessel for the boil. It's a pain in the bum tbh. So I have recently bought a 30l converted hot water zip from eBay which I may use for the mash (otherwise HTL) but still see bottle necks in the set up...!

I'm really looking forward to getting stuck into my first brew back here in Ireland and have ingredients bought for a Mosaic SMaSH with Maris Otter base.

The best beers I've had in the last 6 months have to be the Tuatara APA and 8 degrees RyePA...

Also looking forward to sampling your brews and getting some inspiration for new flavours :)

Well he already said he is home & back in Ireland so he is not in the US. Surprised you don't know about the infamous "South Dublin micro climate" :)

I think it was sunny but to be honest I'm not sure I'd recognise if it was... I'm on back to back winters  ???

So any unusual Xmas brews on the go (maybe not the right place to kick this one off!)?
