One small issue - the meet is after the collection date, unless Conor knows the bottles are getting picked up after the meet. 31st January is the official deadline, so keep it in mind.

I doubt it, from previous years, I think the comp software locks down all the entries. Makes sense, because it's only when registration is closed can categories, assignation of judges etc. happen.

It should be fairly clear cut what category the beer belongs in. Those guidelines are pretty comprehensive - just go through the beer styles you think your beer might belong in, and tick off each characteristic. If you can't decide, enter the beer in more than one category. Simples!

My name is Jack, I am kind of new to the whole homebrewing scene. Me and my dad have made a few batches at home using extract and hop pellets. We also manged to grow some pioneer hops our back garden and made a nice malty IPA. I am in college at the moment and doing a project where I am building a temperature controlled fermentation chamber. It would be great if I could come along and talk to you guys and get some tips on brewing and maybe ask you some questions about your fermentation processes.

Hi Jack,
Sounds good, hope to speak to about your project as it sounds cool. A lot of home brewers use Stc-1000 controllers with fridges & heat sources such as heat belts or old tungsten bulbs as a heat source. Currently doing a project with Rasberry pi + ds18b20 (one wire temp controller) to record & graph the fermentation temperature. Allows me to tinker with basic electronics & raspberry pi. Also allows me to try out some newer software technologies.

Have to scrap the porter had a taste not ready (had pulled 2 bottles from the batch before adding oak chips a 2 weeks ago to compare when the rest was oaked.) so one bottle left I'll bring both to the next meet.

Brilliant turnout tonight lads, great mixture of old and new faces.
Best beer of the evening (and winner of the bag of hops) was craiclad who brought a damn tasty stout.
For me, honourable mentions go to bachus for the "blossom" mead and molc for the first California common. Both fantastic.

I think the first, while less fresh, has a better yeast derived flavour, so will go with that I think. The second just tastes like it has an off flavour to me...
However, I've got a bottle of steam at home tonight, so going to do a last taste off of all 3 and see which is closer to the commercial example.
I'll put a pic of them side by side up here tonight maybe? :)
Overall, it was a great night though. Really enjoyed having the two citra IPA's with different yeasts - made for a great conversation piece. We have got to start doing more experiments at meets - so much fun to compare the "same" beers...
great night for the taste buds and grey matter last night lads... v interesting to contrast the citra IPA'S/ cal common's and discuss the possibility of beer terroir (ooooh there i said it... wine terminology in a beer discussion-controversial!!)
outmeal stout a real winner for me
bubbles' saison deserves a very honourable mention as does molc's citra
but the drink id love to take to dinner and form a lasting relationship with would be Bachus' mead.... masterfull brewing...again

I agree. The first beer was extremely good - such a clean flavour. Ticks all the style boxes for me, and the ultimate test - would I want to drink a pint of it? Yes, indeed.

Great night guys, I'm glad everyone liked the stout and thanks for the hops! I'm definitely on board experiment wise, great to get insight into the effects one or two ingredients can have on the overall beer.

Yes! I'll be in my ipa quest by then, so will do a simcoe or mosaic smash prehaps. I wonder what 300g of Simcoe would taste like... >:)
I've heard a lot of people say that Simcoe is a love it/hate it type of hop. I'd be interested to taste it though! :)
Hens teeth for the commercial guys but we are blessed with qtys in Homebrew shops
From left to right; commercial example, newer version, older version.
Result: the old one is almost a like for like match with the commercial example, but with a muted hop present and aroma. Age is getting the better of it but the fermentation profile is spot on.
The newer one is fresher and has an interesting flavour, but there's a sweet, slightly unpleasant aroma. I think the starter may have picked up either an infection or just mutated, but it's not the same crisp clean flavour.
Interestingly, I think the malting is slightly better in the newer one, but I guess I'll just have to brew it again with fresh hops and new yeast to test that. Oh the challenges of homebrewing :)
Wish the older one was fresher, as it's quite muted, but it's the entry no doubt. Also I think the second batch is a dumper. I just can't get past that off flavour...

Yeah and have some US-05 spare, as well as maybe an amber recipe. Ingredients are quite similar, just different hopping.

Nice follow up dude. It's great when you can taste your own beer alongside a similar commercial example and it compares favourably. A sign that you're doing everything right. (Unless the commercial beer is shite, of course.. Let's not name names..

)
I think "freshness" is a very overrated thing when it comes to beer, but then I mostly bottle condition. There's few beers that don't benefit from a couple of months in the bottle imo. I'm currently enjoying a few different brews that I brewed before and during the summer, and they taste excellent.

I'm tied between trying a equinox pale ale smash with pale belgian malt, a belgian pale ale, or something with the new Slovenian malts from GerErBrewed... Open to suggestions really :)
Just a quick one on the smash. I have some of the new geterbrewed hops secured for review that I'll be ordering this week. North county are also planning a fun wee competition where you have to use the hops from this range for the beer to be entered.
I'll pop up the list of what I'm getting here later and can bring them to the next meet to distribute. Only condition is you have to write up a review of the hops.

Styrian Eureka 2015
Styrian Dana 2015 11.5%
Styrian Bobek 2015 5.2%
Savinjski Goldings 2015 2.5%
Styrian Goldings 2015 3.8%
I'll probably use one of the goldings to make a vienna lager, as I have a lager on right now and can reuse the yeast.
These are packed as 2 x 50 gms bags so some swoppsies could be arranged.
Here they are, minus a pack of Golding's I'll use for a Vienna smash. Say what ye want and I'll offer the leftovers to ncb.

Thanks for the offer molc, but I'm currently working through a backlog of hops from my brewing fridge.
I'm going for a base of Maris Otter, with either a buttload of Ahtanum or a buttload of Amarillo. Depends on how fresh they smell when I open them.
Probably will brew this in 2 weeks time.
Considerably later than expected, but my Maris Otter/Amarillo SMaSH is done. Using only one malt feels very strange to me, but I'm willing to give it a try. :)
It's really fast to prepare though... :) think I was done in 5 hours on mine, from start to cleanup.

Considerably later than expected, but my Maris Otter/Amarillo SMaSH is done. Using only one malt feels very strange to me, but I'm willing to give it a try. :)
Any chance we're going to taste this next meet? Seems like there's a few of us with SMaSH beers that should be ready soon enough!

No, mine won't be ready anyway. We did say April to do the side-by-side tasting, but bring yours along to the next meet if you want.
I have a single hop beer that I can bring along, but there's more than one malt in it. It's actually a cream ale grain bill with a buttload of Cascade. I bottled it last night, a little bit harsh from the dry hop, but that should fade over the next few weeks.
Yeah mine is aiming for April as well. Let's stick with that :)
Mine will need another few weeks before bottling. Hopefully at its best for April :-?
