Title: Pale Ale Dry Hop Schedule
Post by: Will on February 25, 2016, 10:18:31 AM
I've had a simple 5L small batch Pale Ale in the demi john since Sunday evening. I'm looking for tips on dry hopping with pellets? How much would you say for the below? I'm sticking with Cascade.

Base recipe:

1.07kg - Maris Otter
0.16kg - Crystal 60L

5g - Cascade at 60 min
2g - Cascade at 15 min
3g - Cascade at 5 min
6g - Cascade at Flameout.

OG - 1.052
IBU - 37 (Approx)

5-10g for a week should be plenty.

I did pretty much that exact recipe just after Christmas. I dry hopped 28g on a 10L batch for 5 days. The hop aroma was present but not overpowering. If you want a strong aroma, definitely go for 15g+, otherwise I reckon 10-15g is fine.

Turned out delicious. Probably the best beer I've brewed to date actually. I entered it into the nationals so I suppose we'll see after the 3rd of March if the judges agree! It's what I like in an APA myself and I'll be brewing it again for sure.

Scored a 30, very middle of the road. Comments were that my malt base was good and the fermentation was very clean. Lost most points because of the hop character (or lack thereof) which I fully agree with. The judge commented that it was possibly due to stale hops or a long time in the bottle. It was around 3 months in the bottle by the time it was judged so that was possibly it. All the same, next time I brew this I'll be increasing my late hop additions and doing a huge dry hop.

It does seem that pa and ipa are best drunk 4-6 weeks into conditioning and that it's important to ask for fresh hips at the shop. I'll keep your post in mind while late hopping my apa and check the dates cheers
