Good advice... When caramelizing honey be sure to use a large pot. The honey will double/triple in volume when boiling! >:D

Have you done one of these dude? I can't help thinking bochet would be an acquired taste. I think I'd have to actually taste one before I attempted a version of my own.
Honey is expensive stuff.. The idea of burning it to carbon before fermenting freaks me out..
Where do ye get the honey lads? I want to make my first dry Mead at the end of March, so starting the research. :)
I got some from CJ O'Loughlins. They are based in Wexford, €20 odd for 3kg. If you know a chef or someone in the restaurant trade ask them to price it from suppliers for ya. Local bee keeping clubs could sort you out also, get in touch with them. Last year was bad though so honey of that quality was precious.

Just a mix of 'cheap shit honey' and ~400g of my favorite buckwheat honey. Quality of honey is not important for making bochet. The pollen and aromatics get burned away, so you can use the cheap €2 shit for this job.
Two years ago bochet got third place ('http://meadfreeordie.com/'; open category).

Thanks for the reference Bachus, I got my order from GK Well there. Also if any of you pass Tops In Pops on Dorset St. they have/had out of date honey in 454g jars for €1 each.
