Just a quick one..... I got couple black sacks of these before look great around the flower beds but anyways the untreated cocoa nibs have salmonella its mainly on the husk so id be carefull about putting them into anything without nuking them ect.

The boil should kill salmonella??
Assuming it's not already been treated. I think holding at 65C for a few minutes is enough to kill salmonella in chicken so would expect similar would be OK.
Lots of veg and nuts can contain samonella as well, but I'm planning on putting the husks in the mash so it will be at ~65 for an hour and then boiled so no problems, if I was doing it in secondary I would definitely treat it.
I made a tea with some last night and it was really nice.

Boiled up 150 grams of them last Sunday after brewcon and made a syrup from them. The smell in my house from the chocolate was absolutely amazing. The syrup will be going in to the bottling bucket the next time I do a stout.

Well when I say syrup it's probably a misnomer. I should have described as sugar flavoured cocoa water :). I intend to use it instead of priming sugar. I took about two itres of water, 200 grams of sugar, 250.grams of the cocoa flakes and mixed them up. Boiled them up and then let it boil for about 5 minutes stirring a lot. Then reduced it to about half way & let some of water evaporate off for about 15 minutes, stirring continuously. Poured off the cocoa flakes through a sieve and put the liquid back on simmer for another 10 minutes. Ended up with about a litre of liquid. Cooled the saucepan in an ice bath, and drained 740ml of the liquid into a precleaned & sanitised swing top bottle. Added 15ml of vodka to the mix to help keep any infection at bay. Sitting in my fridge now. Will use about 250 ml during secondary & will use the rest instead of priming sugar. Going to use in an oatmeal stout that I am doing on Monday. It should be a chocolate kick to it especially as I use a lot of roast barley hoping it will help offset it a little. If the beer smells or tastes as rich as the liquid it will be unbelievable.

Use mine today in what will become a nearly imperial chocolate oatmeal milk stout. I sifted the husks so that the small bits would be put into a nylon bag, and the larger parts would be put directly into the mash. So 500g in all. The nylon bag was steeping in the second sparge water for 15mins making a cocoa husks tea. Finished at 1.077 with the lactose contributing .007, looking forward to trying it when it's done, there was definitely loads of chocolate in the sample I pulled for the hydrometer.
