I am starting a clean thread for this.
The last sign up from the old list was:
1. Will_D Ok for 1 or 2 shares
2. Simon preference for 2
3. Partridge 1 or 2
4. Pheeel. 1
5. Molc OK for 1 or 2 shares
6. Jacob 1 or 2
7.Richie 1
8.Jolley brewer Ok for 1 or 2 shares
9. Pat 1 or (pref)2 shares
10. Cruiscinlan 1 or 2 shares.
Each holds about 120 litres so its 6 and a bit cornies to fill it.
Now we are getting two casks and they cost €90 each. Cost per share therefore is about 180/12 = €15
If there are less than 12 takers then a second share may be taken but lets see how this fills up first.
I will get them this week!
We are going to do a Russian Imperial Stout and a Baltic Porter (this needs lagering so if you can't lager brew the RIS)!
Can Nigel repost the RIS recipe and can someone post the BP recipe please.

So the casks have been obtained at a discount (only €80 each) - poor old Brian was abit green but hey its what I do!
Will be checking them out tomorow. There is a piccy on the whatsApp thread!
As for payment then I suggest you just pay me at the next couple of meetings - why involve payPal expenses and the club!
Now given that despite our best calculations we have never filled a cask I suggest 7 peeps per cask.
That would make it 160/14 = €11.428571428571428571428571428571 per share or rounded its 11.50!
Cornies are to be Unpressurissed or better still in a 20 litre drum
Ye got the Brian's my friend so I better give a disount from the lad. He is trying to keep me sweet :D. A pint a man from ye all next time we meet :)
Where you get these 20L drums?
Absolutely no probs Brian.
Come over to the Boro for our Comp and the craft gig. Loads'o'beer for you! (Sunday 29th)
See our threads!
Okay so we talked about this last night. For Cask two three ideas have been floated about
a) Baltic Porter
b) Old Ale
c) Wee Heavy
I stupidly suggested the last one (It's a clone recipe for Skullsplitter http://www.beeradvocate.com/beer/profile/118/402/)
6.20 kg Pale Malt (2 Row) UK (5.9 EBC)
0.28 kg Caramel/Crystal Malt - 60L (118.2 EBC)
0.17 kg Wheat, Torrified (3.3 EBC)
0.11 kg Aromatic Malt (51.2 EBC)
0.06 kg Chocolate Malt (689.5 EBC)
0.03 kg Peat Smoked Malt (5.5 EBC)
0.28 kg Cane Sugar (0.0 EBC)
42.00 g Whitbread Golding Variety (WGV) [6.00 %] - Boil 60.0 min
0.50 Items Whirlfloc Tablet (Boil 15.0 mins) Fining
7.00 g Goldings, East Kent [5.00 %] - Boil 15.0 min
To make it easier if everyone that wants in on cask two list could state their order of preference. First option 3 points, second 2 etc. Whichever gets the most wins :)

Okay looks like an Old Ale for cask 2
Nigel, can you post the Old Ale recipe?
Dates:
Assuming it's too late to brew this weekend I assume folks will be able to brew either next weekend or the week after. Giving a couple of weeks for fermenting then the earliest date for filling would be the 11th June but it's probably more realistic to say the weekend of 18th June. Thoughts?
The barrels DO,repeat DO have a wee drop of whisky in them :)
Here's an old ale recipe. OG is 1.085. Comes in at 8.7%:
7.00 kg Pale Malt, Maris Otter
28.00 g Fuggles [4.50 %] - Boil 60.0 min
28.00 g Fuggles [4.50 %] - Boil 30.0 min
28.00 g Fuggles [4.50 %] - Boil 5.0 min
RE: dates. I'm away til the 1st of June but I'll be mad to brew so I'll have them both on a day or 2 later
Stop Press:
Dempsey has just told me that his casks are NOT 120 L more like 140L. Its too late for me to crunch the maths but I will in the morning. We may need 7 shares per cask!
Not that this has 'owt to do with what we put into them!!
Cool. I can probably squeeze 25l out of mine. How about we put expected totals down...

Now, After a sunny afternoon of applied mathematics ('n beers O0) and somer cask guestimates, I reckkon that we need a minimum of 140 litres to fill one of these. We have two and they are not the same size!!
So, it looks like we need 8 shares(ish) to fill and top up said casks and have a bit over!
I also made the stillages today! [Posh name for 4 bits of curved wood with a flat bottom]
More news tomorow!
If we wait a few more weeks there will be some nice new shiny fermenters that arriving that will make sure we have enough going in.
If we went with 30l shares? If possible.

That is actually a good and interesting point. How do we transport that much beer though - just in the fermenter after clearing out the trub? I'm worried about oxidisation with headspace and no pressure.
More the point that every time we do a brew we plan and people say 25L but turn up with a corny. If we brew a few L over each just to be sure we have enough. I plan on transporting in the juice drums. Think they are 25L? Top right to the top, flush with co2 and seal it up.
Should be good to go. As long as the drums are 25L. I could be wrong.
We never had any issues with oxidisation with all previous cask 'projects'. However we had some problems with carbonated cornies :/

Cool - juice drums it is. They're oxygen permeable, so will want to brew close to the time. I was aiming for 23L with the RIS, but came short at about 20L. Using partial mash and DME/LME next time, as those big mashes really are a ballache.
I would like to order the RIS ingredients tomorrow and get brewing ASAP.
What is the definitive recipe we brewed? I can't find it in my BrewBase and searching the threads is a bit iffy to say the least!
resent it on the whatsapp. think everyone involved is on it.
Also if anyone needs and chocolate let me know.

Seems like folks are ready on some of the beers. Can you mark down if you're ready and how many litres you produced?

Lads its not looking good for my RIS. The elements scorched the wort and it has a nasty bitter smokey twang to it. Batch looks like it gonna be dumped.
If anyone want to take up my place feel free or ill do my best to get another lot on the go. Not sure when though. So annoyed. waste of a day and 38L of beer.
Do you do a mad boil Nigel?
I know the OG is very high.
Wasn't a mad vigorous boil. 60 min as well. Something just must have caught and scorched. If I was using LME or DME I could understand how it might have happened but all grain. I cleaned a lot of charcoal like crud off the element and did a full oxy clean after and got some amount of crap off.
I'm normally pretty regular at cleaning my element but there must have been some build up on it. That plus a 1.090 ish wort, not good.
:-[
Just looking to learn as I've never had a problem touch wood although some have come close until I inverted my elements off the base of the floor and in my head I am not superheating a concentrated area, I also helps by not interfering with whirlpool I also think I get better rolling boil as colder wort comes around from below.
The real answer is the fellas using ardbirs where they only apply 70-90% of current and it's impossible to get a burnt element lucky sods!
Anyways back on topic it might clean up in fermentation?
I'm going to pull a yeast vial of my batch and try blending it with some tomorrow night at our meet up. I'm only one share so can see how it blends using the ratio of my share to the full cask. Fingers crossed. To be honest though, I don't have high hopes.
My RIS is finished. ~23L

At the Fowlers meeting we mentioned that it would be a good idea to set some deadlines for these casks.
So shall we say the last weekend in Jul (Saturday 30th/Sun 31)?
That's 4 weeks away?
Are we good to go on this timeline?
A bit too soon for me.
Haven't started Old Ale yet, and it will probably take another 2 weeks before I'll brew it.
Same as myself.

How about a week later then? 6th/7th August?
We can fill the casks separately with the RIS first. RIS should be done by all in a few weeks. Probably not necessary that the last couple are even fully attenuated right?
Because it's going to be aged it would be best to get as much yeast out as possible. Cut down on the possibility of autolysis.
Best have your RIS finish high and leave a lot of body in the beer. Our one is 7 weeks in and is soaked in wood and peaty whisky. Bottle next to allow it merge more. :)

Just a heads up on your old ale recipe. It is a pale beer I see and was wondering how it would handle the strong peaty and oak wood flavour that these barrels are giving off. :-\. The RIS is a robust strong flavour that can in time blend with the peat and oak but not sure a pale malt beer might be dominated by it.
NCB R&D department has run few tests and results were very promising ...
We are pondering a replacement beer for our refill of the barrels now that the RIS is more than ready to come out. Wee heavy is what we are considering.

Jacob, Pat, James. Any ETA on the old Ale?
In primary now. Week this sunday
So can any one knock out 25L of any thing* to fill out the RIS?
We can always leave th ecask short and top uplater (as we did in the past)
Malty/Rich/8 or 9%ish/darkish but 'owt would help!
I'll see what I can do for the RIS. Not promising anything. Might be able to get in an extract batch with some of that lme we acquired. Few other brews to get done first though. Don't know what I'll do with the guts of 50 liters of it but off for for a few days so need something to do.
Aren't the casks 120L. Isn't the reported 140L likely to be enough?
Yes Simon 140 L should do the trick - sort of missed that.
We need to concentrate on the Old Ale!

Jacob, Cahal, Pat, James. Any ETA on the old Ale?
I have a keg of 6% sweet stout I'm not drinking as it was a little too sweet for my liking. Can bring a sample to the meet and you can see if you'd like to add it in.
Sounds good to me. My poor liver couldn't handle that much RIS .
Brewing the old ale early tomorrow
67C mash temp ?
Correct. 152F in the original recipe

Let's get the last few totals up on the old ale and we can fill it as well. Would be great to have both ready for Christmas.
So how many litres did we end up using for the RIS?
All but ~5-10l, so 130L I'd say. Didn't need to add the sweet stout for topup either.
I have 4.5 L in the freezer for top ups.
So according to that we only need one more batch to fill up the cask with the Old Ale
Cask 2 Old Ale - actual total = 25+23+23+0+0+20+21+0 = 113L
