Title: Lambic Barrel 2016

The date for the fill will be 4th June. Each contribution will be 25L. I've got some old hops that I will distribute those participating. All wort will need to be brewed and delivered to me on the day.

If you're ok with all the above and interested in participating in this barrel please add your name below. If we're oversubscribed we'll give preference to previous participants and active Liffey Brewers.

There are a few missing from the list that were involved last year. So your prospects are looking good CH.
Will close the list of participants on Friday next (27th May) so we can organise contribution size and to allow time for required ingredient purchase etc.

Looks straight forward enough, any pref on flaked or torrified, best that we all use same or does it matter?

We not following Cantillion's regime ;)?


Ingredients:
Per 25L

4kg of pilsner malt
2kg of unmalted wheat or torrified/flaked wheat
20g 4% AA Saaz (or equivalent to 10 IBU)

Mash:
Option 1 - Incl Cereal Mash - This is required for raw wheat as the first 2 steps are the ceral mash
1. Dough in 2kg of unmalted wheat and 400g of pilsner with 10L @60C
2. Increase temperature to 100C and hold there for 30min
3. Add 3.6kg of pilsner and 3L water. Adjust mash to 70C and hold for 2hrs, stirring regularly, then rest for 30min
4. Sparge with 20L @95C

Option 2 - Infusion step mash - This is best suited if you use flaked/torrified wheat or your kit doesn't suit doing the cereal mash
1. Dough in at 45c for 15min
2. Rest at 50c for 15 min
3. Rest at 65c for 45min
4. Rest at 70c for 30 min
5. Mash out  76c and sparge with 88c water

Boil:
Boil for 2hrs
Add 10IBU low AA hops @60min

That process you've posted looks interesting. Are they Dodge's notes from the cantillon brewday? 🤔

Personally, I intend to give cereal mash a miss this year as I've a lot on my hands that day. I'd encourage trying it if you're curious about it. I'm leaning towards flaked wheat and step mash option.

250L plus. Have a couple of top uppers lined up. Always needed. Best thing is to bring full amount on Saturday. We'll have 200L initially and top up a few days later.

Leave that to yourselves to agree.

My only stipulation is that you have a container with me for last year's stuff by this Fri. And secondly, that you brew Saturday morning and deliver to me Saturday afternoon.

Big thanks to Mark for organising and being the landlord.
Was an interesting brew day alright as I never had 14kgs in my MT before

LordStilton arrived with fresh wort to top up this evening. I'm happy to report that the barrel is now full and fermentation is well underway.
Thanks to everyone involved for turning up with the correct volumes on time. It was a fairly painless process this time.

I was brewing 24hrs in advance of the others  and need to be finished by 5pm on the Friday so task was to get 55L with ambient water temp, 13 Degrees, (High for me but air temp was 24 on Friday :o) to 5 Degrees or below.
I'd seen it in other brewers setups and wanted to give it a go.
The 5 degrees was to ensure there was no unwelcome guests before it got anywhere near the barrel on the Sat fill and was still cold when it was delivered, so used it initially with whirlpool and then finished straight into fermentor using a small pump straight out of the boiler through the coil.
I was thinking I could use it for pilsner wort as current mad summer temps can only get to 20 degrees for 35L and then I pump into conical in the fridge for 3-4 hours to get to target 10 Degrees.
I'm a bit A retentive when it comes to hygiene and a use SS like holy water but to be honest it was a complete pain to first run through PBW, water, starsan for sanitation etc even though I achieved the desired result and for good measure topped off with a good squirt of C02 I won't be doing it again reverting back to the fill and chill method as I won't have the time constraint next time.

Can everyone get kegs/drums for their share to me between 12-17 March please. I will have them filled and ready for collection when you're dropping the fresh wort.
I'd like to start early on the morning of 18th so could people drop their wort to me early please.

I'm assuming same contributors and amounts this fill. If there is any changes required please let me know over the next week or so.
Same recipe as last time. I have enough 'special' hops to do the full barrel so can distribute when I get the kegs or beforehand as arranged. I think flaked wheat order is in hand also.

Refill date is scheduled for 8th April as discussed on our WhatsApp group.
