This came up before but never moved past the third pint, get start up seed capital and build a cheap attachment unit to fit on to your fermenter that continually reads the gravity on your fermenting wort. We have a plethora of "IT" ??? ,types here so get your thinking caps on and build it. I'll buy one :)
