Hi All,
New red wine barrel arriving next tuesday.
Was looking for a bit of help filling the thing.
So was thinking with the warm temps and all it would make sense to go for a saison again, but to up the mouthfeel on this one by adding oats and rye.
So lets say the recipe goes a bit like as follows:
Mash 70 mins at 67C
Boil 90 mins
Abv - 5.5
Pilsner - 70%
Wheat - 15%
Pale Rye - 7.5%
Flaked Oats - 7.5%
Ibus - 5. some old low AA hops would be ideal
Water:
HCO3 - 20
Cl - 210
SO4 - 70
There's 225 litres to fill,
I will fill 85L, these 85L will be soured
So that leaves 140L to fill with clean Saison, use whatever liquid Saison yeast ye like, a mix will be good.

Hey Fionn when should we have this ready by?
So how are we fixed?
is this friday a possibility?
Or could ye all get the stuff to Asti before friday?
How is everyone for quantities, what do ye all reckon you have if ye leave behind the trub?
Paul and Adrian are away, maybe the following weekend, during or after the comp perhaps?
Next weekend suits me better than this one. I'll have a full corny so 19 litres
I'm well behind on this one lads. Probably won't be able to have it ready until the middle of next month.
If that's well off the mark I'll pull out. :( I had a cross country move and now I'm about to move apartment again so all my fermentors are packed away.

No worries Séan, but we'll have to go ahead without your Saison, it's no problem, I would normally put in 40 litres of fresh to feed to bugs and only allowed 20 this time so it's grand, I can can make the extra 20 unless someone else wants to do it?
I've a full corny ready too.

Ok, got word from Fionn. We're emptying the barrel between 6pm and 7pm this evening.
Don't suppose anyone on the south side would be able to take mine with them? Am way down in Tallaght these days so Russel St. is a bit of a trek mid week!
