Has anyone any advice on adding banana into secondary.

I have peeled,chopped,rinsed with star san and frozen 3 kgs banana and beer is now ready for secondary.

Thing is that is allot mass.... so if i blend it with vodka to help steralize im still not sure if all bugs will be dead so can i boil the mixture for few minutes before cooling and adding to secondary any taughts ? Not sure if it will affect banana good or bad.

If you use wheat beer yeast you could get all the bananas you want from it :)

AFAIK the reco is to freeze and boil fruit but that's normally for raspberries etc. I guess a quick boil wouldn't hurt

I wanted to try the non yeast route but i do love banana tasting weiss beer over clove.

Banana is suppose to give good body to the beer also its just experimentation as much as anything else.

i'm guessing putting 3kgs in fast fermenter will be a bad idea also.

With fruit, generally boiling will blast off all the aromatics and interesting flavours. Also you could probably get away with just bringing it to pasturisation temperature, though personally, I'd just chuck it in and see what happens :)

If it aint broke dont fix it i guess. I shall bung it in and if there is an issue boil next time. The freezing and alcohol in beer should help kill things

So it flowed nicely after I heated it up to fermentation temp. Might have saved time doing this first.

One handy trick you might notice if you have a fast fermenter I use the top or lower ring of a keg as a sort of stand in the fridge. Bolt welded or drilled either side...simples and cheap

I was gonna make small post but no need now job done. Have solar panel pump and filter for star San bin keeps any particles  from gathering in there lasts ages.

nice job on the portocabin, did you account for the sugars in the banana or how to figure final gravity.

I reckon half percent gain from banana but not really worried about fg or alcohol maybe in future brews. Technique and flavor at this point.

So it tastes good. Not much banana. I have to tell people it's banana before they go ah Ye that's it. I did add gelatin to keg but it stayed hazy. Very creamy due to banana and success as far as the ladies are concerned.

Would I brew it again. No.
Can you get banana without flavouring or yeast type.....fermentation temp Not realy.

It's one off the to do list. I would maybe like to try a cherry lager but that's it with fruit beers. It was worth doing as you are constantly upping your brewing skills but not impressed.

They were yellow and hard not green very fresh and 3 kgs worth. Maybe is someone else tries go with green and 6 kgs

IMO - you want Black spots all over, soft but not sludge.
