Title: American Brown Ale
Post by: irish_goat on July 26, 2016, 02:41:39 PM
Anyone fancy critiquing this recipe for a nice brown ale? Hoping to put it on in a week or so and have it ready in time for the autumn. Potentially considering some sort of coffee addition to it as well (or part of it).

Style: American Brown
Size: 23 liters
Color: 17 SRM
IBU:   30 IBU
OG:   1.054
FG:   1.010
ABV: 5.6%

Grain:
3.5kg Maris Otter
500g Flaked oats
500g Wheat malt
250g Light crystal
200g Biscuit malt
130g Chocolate malt
50g Belgian Special B

Hops:
25g Northern Brewer (9.8% AA, 60 min.)
5g Cascade (6% AA, 15 min.)

I'd skip the wheat and oats and up the Maris but either way it looks good

Looking for a bit of creaminess though, hence the oats. Wheat I tend to just add to everything to help with head retention.

light on the hops? will that get you to 20-30 IBU?

Online recipe formulater says it will. Will run it through Beersmith when at home.

watch the age of your hops you want it punchy for that style if say it was to be commercially brewed ;)

I did a 6.6% brown ale with 53 IBU's and used some brown malt as well. Not at all hoppy and really nice. :)

20-30 IBUs is the BJCP range for American Brown. Its meant to be an easy drinking, low hopped beer. A bit like a brown pale ale. In comparison SNPA is 38 IBUs so you can see its going to be low hopped

50-60 and you're stepping more into Brown IPA territory

I'd murder a pint of Moose Drool tight about now...

BTW I did a version recently of Jamil's Janet's American Brown. Which was 60ish. It was quite tasty 😋

Would highly recommend Dempsey's Monkey Nut Brown Ale (a Janet's Brown variant), quite a bit above the 20-30ibu, but really a superb beer.

(Even if he is now nearly 80 yrs old)

Mine would be to move all the 15-2 minute additions to a hop steep

I made that last year, its Tasty McDoles recipe in Jamils book. I loved it, hoping to do it again next week.

Brewed this today but went with a good dose of Citra and Amarillo at the end instead. Had a nightmare when I couldn't find the hosepipe connector and ended up having 20 mins extra hot steeping whilst I looked for it.

All safely tucked into my new fermenter now.

Apparently 30litres but reviews online say it has loads of spare headspace. I've 22 litres in there today.

Looks great, where did you get it?

I have just ordered all my ingredients to brew an American brown again next week, really looking forward to it now. Its basically Janets brown but I've subbed the cascades for Ahtnum.

Like Bubbles said I got it from BCS. Its also on the BN site forums with some input from tasty (here (http://www.thebrewingnetwork.com/forum/viewtopic.php?f=&t=18509))

Theres a session version recipe on Nikobrews website (here (http://nikobrewhops.blogspot.ie/2014/11/mike-mcdole-and-session-janets-brown-ale.html)) which I was tempted to try but then I decided Janets was so nice the last time I made it I'd just go with it again.

Note: This is the Imperial version of JBA. Brewing Class Styles has the "regular" or traditional version. I made the imperial version so I could enter into the Specialty Beer category. This is the version I brew once a year at Russian River Brewing Company.
BTW: All three versions (regular, imperial, and light) have the same basic hop bill at about 65 IBU.

Bottled mines the other day. Half of it got a dose of Guatemalan coffee added. Taste from the fermenter was very fruity with a nice touch of roast malt. Will pop a bottle in a fortnight or so and bring one of each to the next Maiden City Brewers meet for a side by side tasting.

So we had both the brown ale and the one with the coffee addition last night. Half preferred the coffee, half preferred the regular. My general feeling was that the coffee wasn't strong enough and the Citra hops clashed a little bit. If rebrewing I would up the amount of coffee and skip the dry hops. I really liked the non-coffee version myself, the creaminess came out perfectly but I'd probably aim to mash a little higher next time or add more wheat to get a bit more body into it.

Just tapped my Janet's Brown tonight. It's good, I'm drinking it happily but it's very different to my last batch on my old system. Lacking the same bitterness (something I've learned about my new system/beersmith profile is I need more ibus) and I didn't dry hop this one. Also used athanum instead of cascade and I'm not mad on it.  It's to subtle enough that the beer is still good but it's too perfumey for my liking. Still it's a tasty beer, lovely chocolatey malt character and the body is lush and full with the wheat and high finishing gravity, very smooth.
